[ES/EN] Valentine's Day Donuts

For this Valentine's Day or Day of Love and Friendship I decided to make some filled donuts for my loved ones.

  • 1 egg yolk
  • 6 tablespoons of cornstarch
  • 150g sugar
  • 1/2 liter of milk
  • Vanilla to taste
  • A pinch of salt
  • 1 yema de Huevo
  • 6 cucharadas de Maicena
  • 150g Azúcar
  • 1/2 litro de Leche
  • Vainilla al gusto

I recently made a version of the pastry cream with fewer ingredients, but I wanted to make the most common one, which would be used to fill donuts.

Hace poco hice una versión de la crema pastelera con menos ingredientes, pero quise hacer la más común que sería esta para rellenar las Donas.

  • Separate the yolk from the egg and beat.
  • Separa la yema del huevo y batir.

  • Mix all the ingredients in a pot (include only the yolk using a strainer to avoid any cloudiness).

  • Place over medium heat and stir while heating to prevent the cream from burning.

  • When it thickens and reaches the desired consistency, remove from the heat.

  • When it is warm, cover the pastry that is in contact with the cream with film and allow to cool.

  • 3 cups of 8oz All-purpose flour
  • 25g or a tablespoon and a half of Yeast
  • 1 cup of Milk
  • 1/2 cup of Sugar
  • 50g of Butter
  • 1 egg
  • A pinch of salt
  • Essence to taste
  • 3 tazas de 8oz Harina todo uso
  • 25g o una cucharada y media de Levadura
  • 1 taza de Leche
  • 1/2 taza de Azúcar
  • 50g de Mantequilla
  • 1 huevo

PREPARATION - PREPARACION

  • Mix together a cup of warm milk, 3 tablespoons of sugar, 5 tablespoons of flour and 25g or 1 1/2 tablespoons of granulated yeast and set aside for the yeast to act for 20 minutes.
  • Unir un poco de una taza leche tibia, 3 cucharadas de azúcar, 5 cucharadas de harina y 25g o una cucharada y media levadura granulada para mezclar y dejar en reserva para que actúe la levadura por 20 minutos.

  • In a separate bowl, mix the flour and sugar, then add the butter and egg and mix.
  • En un recipiente aparte unir la harina, la azúcar y mezclar después agregar la mantequilla, huevo y mezclar.

  • Add the fermented yeast and mix.
  • Agregar la levadura fermentada y mezclar.

  • Then mix to incorporate the yeast well.
  • Después mezclar para incorporar bien la levadura.

  • Knead on a floured surface until you obtain a more manageable and less sticky dough, then let it rest for 20 minutes to 1 hour covered with a cloth so that the dough rises.
  • Amasar sobre una superficie enharinada hasta obtener una masa mas manejable y menos pegajosa después dejar reposa entre 20 minutos y 1 hora tapado con un paño para que crezca la masa.

  • Then stretch it on a flat surface until it is 2cm thick.
  • Después estira sobre una superficie plana hasta tener un grosor de 2cm.

  • Cut into desired shape using cookie cutters, knife or the selected tool covered in flour.
  • Cortar con la forma deseada sea usando cortadores de galletas, cuchillo o la herramienta seleccionada cubierta de harina.

  • And fry in oil over high heat until golden.
  • Y freír en aceite a fuego fuerte hasta dorar.

  • Powdered sugar
  • Colorant
  • Milk or water
  • Azúcar impalpable
  • Colorante
  • Leche o agua

For the red cover

  • Put the powdered sugar in a bowl and add the water little by little and very carefully while mixing until you get a thick consistency but liquid enough to cover the donuts, then add the food coloring and mix until you have a homogeneous color.
  • poner la azúcar impalpable en un recipiente con y agregar el agua de poco y con mucho cuidado mientras se mezcla hasta obtener una consistencia espesa pero suficientemente liquida para cubrir las donas después agregar el colorante y mezclar hasta tener un color homogéneo.

For the white cover

  • Put the powdered sugar in a bowl and add the milk little by little, very carefully, while mixing until you obtain a thick consistency but liquid enough to cover the donuts.
  • poner la azúcar impalpable en un recipiente con y agregar la leche de poco y con mucho cuidado mientras se mezcla hasta obtener una consistencia espesa pero suficientemente liquida para cubrir las donas.

Be careful with the amount of water to avoid diluting the mixture too much, because if it is too diluted it will not dry and will remain translucent.

cuidando la cantidad de agua para evitar diluir demasiado la mezcla ya que si esta muy diluida no se secara y quedara translucida.

Now with the donuts, filling and topping, it's time to assemble them.

Ya con las donas, el relleno y la cubierta toca armarlos.

  • First make an opening with a toothpick or knife
  • Primero hacer una abertura con un palillo o un cuchillo

  • Fill with the pastry cream using a pastry bag or a rigid plastic bag with a hole in one corner.
  • Rellenar con la crema pastelera con una manga de repostería o una bolsa de plástico rigida con un hoyo en una esquina.

  • Then cover with the glaze.
  • Después Cubrir con el glaseado.

  • You can also add more decoration like sprinkles, candy or anything of your choice.
  • También le puedes poner más decoración como chispas, grageas o cualquier cosa de tu preferencia

Making glazes can sometimes be a difficult task, which is why it is recommended to add very little water or liquid to the sugar, to prevent it from being too soft or liquid.

It would have been ideal to place the donuts on a rack, so that the excess glaze could drain off.

You made a very detailed post, that's great.

I mentioned the glaze because it would be too soft.

The rack is a good idea, it didn't occur to me even though I've seen it a few times, thanks for the advice.
