I'm a fan of soup, but I'm not really a fan of beetroot. However, I might try making it into soup this week. What extra ingredients did you use to enhance the flavor? =)

Stock, miso, cummin, coriander seeds - you can also add honey or maple syrup, and roasting it brings out the sweetness. I think if you roast it you might be suprised at the flavour!
