Qurator's: Hive Top Chef! | Fried Rice | Fried rice with chicken and shrimp

Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Fried Rice. This week, fried rice takes center stage. The recipe is actually very simple, but it has its secrets. To begin with, the rice should not be freshly cooked when you fry it. I prepared it the day before and stored it in the refrigerator (not frozen) so that it would release moisture and be nice and dry. Otherwise, the consistency will be unpleasant, i.e., sticky, and you won't achieve the desired result: nice and fluffy fried rice.


For this recipe, you can prepare regular rice (ratio 1:2, one cup of rice to two cups of water) or, if you have some leftovers in the refrigerator, you can use that as well. In my case, since I don't eat rice, I had to make it myself, using a ratio of 1 cup of white rice to 1½ cups of water. I decided to serve this fried rice with chicken and some shrimp, and of course I couldn't leave out my favorite soy sauce and vegetables.

This is the first time I've made fried rice, and I loved it—it turned out delicious. I used just a few seasonings: salt, pepper, dried oregano, and paprika. Even so, this fried rice was finger-licking good.

Ingredients


- 1 cup of white rice cooked the day before
- 150 grams of chicken breast fillet
- 50 grams of cleaned shrimp
- 1 egg
- 13 g chives or green onions
- 25 g white onion
- 1 clove garlic
- 3 g celery
- 15 g garlic
- 35 g green bell pepper
- 115 g carrots
- 30 g peas
- 1 teaspoon dried oregano
- 1 teaspoons paprika
- Salt and pepper to taste
- soybean oil for frying (approximately 6 tablespoons)
- Soy sauce to taste

Preparation


1.-. Preheat the pan with a tablespoon of oil. Beat the egg and fry it so that it breaks into pieces; the smaller the pieces, the better. Set aside.

2.- Wash the vegetables, peel the onion, garlic, and carrot. Then, chop everything into very small pieces.

3.-. In the same pan where we fried the egg, add 3 tablespoons of oil and sauté the vegetables. Season with salt to taste and dried oregano. Once ready, when they have wilted a little and the carrots have softened, remove them from the heat. Set aside.

4.- Cut the chicken breast fillets into pieces and fry them in a tablespoon of oil. Season with salt and pepper to taste, then add the shrimp and mix to combine the flavors.

5.- As soon as the shrimp turn pink from cooking, add the vegetables and mix. Also add the white rice, egg, paprika, and soy sauce to taste. Add a tablespoon of oil and mix everything wel.

6.- Finally, add the green peas, mix well, and turn off the heat.
