When it comes to food, people's appetite can really vary. Some likes pizza and pasta, others are into meat, and desserts. The same goes to our dislikes. I personally only dislike a few foods- artificial juices and champorado are on top of my mind. Some people don't like eating intestines like liver (liver spread), isaw (pig's large intestine), lengua (tongue),and among others. I respect people's preference that these dishes are not for everybody. How these are cooked could have a huge impact on the dish too because if not cleaned properly, it could really stink.
For today's feature, I'd like to share our food trip to 8flix. This restaurant is known to serve the most delicious tuslob-buwa in Cebu.
It's my first time to eat this exotic food in a while since 2015. This is simply pig's brain seasoned with onions, oil, and fish sauce. Then we have to wait until it comes into a boil.
Back then, the set up was quite unhygienic since the cooking area was common for all diners. We just have to buy the puso (rice) individually. Fortunately, since post pandemic, tuslob-buwa restaurants already have separate pans for each group of diners. Also, I forgot to mention that the pig's brain is unlimited, you just have to purchase the individual rice.
They also have some side dishes too. I ordered the stuffed eggs since it's their best seller.
Verdict: It was truly an experience that I would try again but not often. The excessive oil made the dish more appetizing but at the same time unhealthy. The pig's brain actually tasted really good. Pro tip, the ratio between tuslob-buwa and rice should be 80-20 to maximize the dining experience.
