Sundays are also for making turbo fast cookies

I guess you have seen a couple of my 'Sundays are for slow cooking' post dropping by over the last couple of weeks. And indeed I truly like doing that in slow weekends.

But apart from making stews that take hours, every now and then the snack attack comes racing in. That is when this recipe came kicking in.

Based on the recipe from Miljuschka I made a some small adjustments here and there to give it a go. Not so funfact: Miljuschka is a famous Dutch chef who is the daughter of this lady who testified against her high profile criminal brother. Ever since then Miljuschka has had protection around her, which if course sucks. But it doesn't stop her from being on TV and everything. Side note...but weird info right? I love a LOT of her recipes honestly because she does makes stuff nice without bullsh%t.






On to the ingredients

The same as with making bread that I did last week in this post is that with making cookies or pastry it is a lot more critical you stick to the amounts of the ingredients. And I went on freewheeling again and that turned out just right.

I went for half of all of the ingredients for not making too much cookies (because you have to eat them all yourself, so these were the amounts I took

  • 115 grams soft butter
  • 110 g bastardsugar
  • 50 g sugar
  • 1 egg
  • half a teaspoon vanilla sugar
  • 150 g flour
  • 1/4 tea spoon baking soda
  • 1/2 tea spoon salt




Start with mixing the soft butter (room temperture is nice for this) with the sugar and the bastard sugar. I used a fork for this but any kitchen machine will do the trick.



Add the egg and vanille and give it a stir. After that you add all other remaining ingredients and mix everything together to until it is a nice and fixed mass. Don’t overdo it. When it is done then it is done.



This is the point when you find it too much you can also choose to take a part, wrap it in to ovenbake foil and keep it in the freezer until the next time you get hangry on a sunday evening.





Adding the additions

I choose to add some stuff to pimp these cookies a bit. I took some macademia nuts that I had lying around here and gave them a nice grind.



I also took a some pieces of salty caramel chocolate that conviently is always in the house here (don't judge me on this) and the same here. Give it a grind but don't grind them too fine.


Toss them on you dough ball en mix them in with the rest. It is okay to make it seem messy if you ask me haha. Your dough is ready to use now and this took about 10 minutes to make.





Finishing the bake

Preheat your oven to 180 degrees Celsius. While making little dough balls on a baking sheet, keep in mind that this dough balls will turn out a lot bigger. So leave enough space between them.



Stick them in the oven on that same 180 degrees Celsius and leave them in for 8-10 minutes.

Now don't get to greedy here. Leave them outside the oven for 15 minutes to cool off and then also the insides will get nice and hard. Otherwise you have a chance of that the inside will stay too soft.

That's about it! Cookies in a little more than 30 minutes. Why not when you are having a snack attack. Enjoy!!

But is it really a problem hahaha? With these cookies, I think it should not be an issue :D

I know what you mean, just joking. Me too, when thinking about baking something, want to make just half of the amount, the only problem is that the baking part almost never happens 😂. I do want to prepare some cookies for Christmas 😇

Well the base of this recipe is just fine for making any sort of cookies I guess. If you want them lighter coloured..then use white bastard sugard versus the easy brown one I did hehe.

But yeah..half of the amount was fine. Better said...i used half of the amount from the original recipe (the amounts you see here are already half) and still I put some in the freezer for a next binge session haha.

For us something like 2 cookies per person is fine because they go big and usually they dont go so well overnight.
