Pho sounds so full of flavour @silversaver888! I've never heard of rock sugar, must see if I can find it in our spice shops. I'm sure this soup will be great when one is feeling a bit fluey.
You should try making SPROUTS, it's so easy and you'll always have a fresh supply on your windowsill.
