I became so busy that I don't have enough time to make a post in here.
Today I'm gonna show you how the Pinoy style chicken Tinola or chicken broth soup was being done.
I was being assigned in the kitchen to help prepare the food for the school camp.Together with my colleague, we helped in preparing this recipe.
So I took this opportunity to take record the step by step procedure of this recipe.
Here are the ingredients to be used in cooking the Chicken Pinoy Style Soup/Stew.For a larger or big event ingredients also vary from the number of people who will eat on the the said activity.
6kilos of chicken (cut into parts)
7pieces of small sayote or chayote cut into wedge chunks
3cups of fresh malunggay leaves
2thumbs of ginger peeled and cut into Julienne cut
5 strips of sili to add a little flavor to the tinola
I bulb of garlic (minced,crushed and chopped)
4pieces chopped tomatoes
1 piece of rolled tanglad or lemon grass
Spring onions (depending on how much will you add)
3-4 pieces of small onions(to add aroma to the soup)
5-6 Maggi chicken flavor(chicken broth cubes) this is to add a savory flavor of the chicken soup
3Liters of water (to consistently boil the chicken parts)
5tablespoons of cooking oil
Salt and pepper to taste(according to your preferred taste
Fish sauce (optional according to your preference)
Here's the procedures in Cooking this Pinoy Style Chicken Soup
First,Wash and cleaned first the chicken.Remove unwanted skins or chicken hair on it.
Prepare also the cabbage, the malunggay leaves and the sayote to add in the soup.
The Fresh Malunggay Leaves was harvested just in our garden.
The Cabbage washed thoroughly.
The Chayote cut into chunks
Second, Prepare the herbs and spices to be added in the chicken soup.Like onion, garlic,onion springs,tomatoes.Cut it into desired sizes perfect for chicken soup.
Third, Prepare the pan to be used for cooking.I used a bigger casserole for I have to feed more than 15-20 persons.
Fourth, Add the cooking oil once the casserole is being heated.
Fifth, Add the spices,and start to saute it.
Sixth, When the spices is a little bit Brown,add in the Slowly stir and mix it with the spices.
Seventh, Seasoned with salt,and pepper enough to add taste to the chicken.Add a little amount of vinegar in it to remove the smelly part of the chicken.Cover the casserole and simmer it for 2minutes.
Next is add in the sayote or chayote,the tomatoes and the spring onions/tanglad or lemon grass in it.
Mix it.
Next is add a liter of water (I used 3liters of it)enough to cover all the ingredients and can serve for about 15-20 persons or more.
Next is add the maggi magic broth cubes in it.
Wait for it to boil.Cover it and check if the chicken is already tender and soft.
When it's tender and cooked add slowly all the green leafy vegetables.Taste it.Check if you meet the consistency of the taste of not you can add seasonings on it (salt and pepper to taste)Simmer again for about 2 minutes.Its done and served with a hot rice.
