Hello@foodies community how are you this holiday season.Hope you're all great and fine.This season I'm happy to share to you this Christmas delight,wrapped in Joy,my Empanada filled with Tuna and vegetables.
And because I really do loved cooking,I'm trying my friend's Empanada recipe.
I gave my family a sweet treat through making this Empanada Delight filled with tuna and vegetables.You can always choose to cook this either by baking or frying.

Here what to do in making the Empanada..First of all is to gather and prepare all the ingredients needed in cooking.
EMPANADA FILLING
You will need:
1 PC of chopped carrots
1pc of chopped potato
1pc onion
1clove of garlic
1 can of tuna in flakes oil(drained)
Salt and pepper to taste
2 tbsp of oil/butter
3tbsp of oyster sauce
2 tbsp of soy sauce
1/4 cup of melted cheese

In a pan,add a small amount of butter or oil,add all the aromatics like garlic and onions.

Next to add,are the vegetables like carrots and potatoes,stir it thoroughly,add soy sauce and and oyster sauce, and sprinkle pepper and salt to taste.Cover an simmer it for about 3 minutes enough for the vegetables to become tender and soft.

And when it becomes tender and cooked,add the tuna (drained it's oil)and melted cheese.

Placed it for a moment in a clean plate and set aside...


Prepare the sliced boiled eggs also for another options,you can add this to your vegetables in filling the Empanada..

MAKING THE DOUGH/CRUST
To make the Empanada dough or crust prepare the following ingredients
3 cups of flour
1 c of water
120g of oil
1tsp of salt
3 tbsp of sugar( you can always adjust the sweetness of the dough of you want a sweeter crust)
1pc of egg

Start mixing, the flour,salt and sugar to other wet ingredients, alternately mixing the dry ingredients to it..

Wash you're hands thoroughly and you are going to mix everything using you're bare hands.In this way you can ensure that all the ingredients are being mixed.
After mixing it all,knead the dough and of it's done..Let it rest for about 5 minutes you can cover it with plastic and set aside.

And when finished resting it..
Start making the Empanada with tuna,egg and vegetables filling..

Start by cutting a small portion of a dough, you can weigh it using weighing scale in cutting the dough to ensure uniformed sizes.
Flatten it using a rolling pin but I don't have any rolling pin so I am using my hand to flatten it on a plate,then place a small amount of filling, vegetables and a piece of egg..Arranged it accordingly.

Start sealing each side using a fork,sealed it properly so as not to break the dough when you start frying it.

You can also used the Empanada molder of it's available in your place.Since I don't have to buy some,so I'm using a fork in sealing each side of the crust.

Continue until you're finished with the last dough..

FRYING THE EMPANADA

In a medium heat pan,add some oil,enough to cover the Empanada when frying.Fry it until golden brown.Drain it in a strainer to remove the excess the oil.

Best serve when hot and paired with fruit juice drinks.
