Thank you so much for the mention, my dear friend ❤️ I'm so happy you could find your way to the coconut flavor you had been looking for--and a whole more natural flavor in general--. It's a shame that real coconuts are wasted that way after traveling a distance to Chile; some people may think coconuts taste awful if they haven't had the chance to try a fresh one. Anyway, your sponge cake looks fantastic; the crumble looks moist and soft, and because of the ingredients you used, I'm sure it's delicious 😋 The blender too works its magic sometimes; I'm not sure about this, but I think it makes dificult (gluten-free) flours hydrate better.

When I arrived here, I told a Chilean friend that I wanted to buy a dessert with coconut and she told me that Chileans don't like coconut and that it was difficult to get a coconut dessert. After I tasted the coconut that comes here I understood everything. 😿

Although I discovered a place in the city market, where they sell coconut flakes and the truth is that it tastes good. I actually buy it to combine with nuts.

You can't imagine the happiness I felt when I tried this little cake, I almost cried with emotion because I loved its flavor. From now on I will never miss that organic coconut flour in my pantry. By the way, I didn't use coconut milk because the commercial ones contain palm oil and it tastes like anything but coconut milk.

Good to know! I know little about commercial milks. The good ones are expensive, that much I've learned 😏
