I don't often cook omelettes but every now and then I like to cook them with a rich filling, today I chose arugula and mortadella as the filling.

For this recipe you will need:

  • 200 grams of arugula
  • 3 slices of mortadella
  • 2 tablespoons of fine salt
  • 2 tablespoons of olive oil
