I honestly am scared of cooking meat like this. I've never done it and don't understand it. But this looks delicious enough to want to try.

You should give it a try; it really isn't difficult and well worth the effort. If you have a meat thermometer there is nothing to be concerned about. I know you can do it @riverflowes.
I don't know, I don't like my house smelling of meat. I might get a Weber bbq at some point as I know poeple do roasts on those.
