Receiving a Good Bunch of Eggplants and Cucumbers from Aunt Velyn and Making Tortang Talong and Ensaladang Talong for Lunch

I'm avoiding Eggplant right now, that's one of the vegetable that I should avoid but then just thinking about "Tortang Talong" is enough to not think about what's the right or bad food for me. Like, Tortang Talong is one of the best food that I really really love. I love to dip it in a special sauce with soy sauce, calamansi and chili on it. That's how I eat it in the past. It change after I had my surgery last year. And you know, it's not just Tortang Talong that I love but also "Pinakbet" with lot's of eggplants. Then there's that "Ensaladang Talong" too.

Hahhh, it's seriously hard to void them completely. Having this every once in a while is not that bad no? So yeah, i chose to eat this sometimes, as long as I don't eat it every day. Heh ♪┌|∵|┘♪.

Aunt Velyn brought another blessings for us here in Bansud. And this time we got Eggplant and one big Cucumber, she's really so sweet. UwU. Not sure if she bought it or it was also given to her by their niece, I didn't really ask. And after seeing this, I immediately think of Tortang Talong and Pinakbet. I suddenly craved for some, I love my Tortang Talong with lots of tomatoes, sadly we only have one in the fridge, lol.

I asked the oldies first if they want the tortang talong, they said yes but Mommy F requested the ensaladang Talong. Eggplant is also not good for her but well, this is a cheat day. Lol. I started grilling the Eggplant in our gas stove.

Here they are, I think I grilled it just fine, just enough to soften the eggplant.

So aside from the main ingredients, the eggplants, we'll also need three large eggs, one small tomato, sadly we only have one that day, huhu - I'll use three if there's more available. Lol. And ah, we'll also need garlic and onions and cut then however you want it. I cut ours like this.

I cut the other ingredients while grilling the eggplants so next is preparing the egg. Just beat it and season it with salt and magic sarap. It'll taste even better if we put pepper on it but i'm too lazy to buy so I cook it without it. Then we'll also mix everything, the grilled eggplant, tomato, onion and garlic. By the way, I also cut the eggplant into small pieces so it's kinda different from the typical Tortang Talong.

After all the preparation, we'll just mix them altogether. Some put flour on their Tortang Talong but seriously, I prefer it with just egg. Although it's good when a torta is crunchy, but it's different with this recipe.

It's cooking time! Make sure to heat the pan before putting everything, we don't want to stick it into the pan no.

Once the other side's done, just flip it and wait for another minute. Once done, repeat it to the next batch until everything's cook.

And there we have it, our Lunch's ready! I just prepare a special dip with just two ingredients, it's soy sauce and calamansi. We're all set! Let's dig in!

Ahhhh, wait, there's actually one more ...

It's the ensaladang talong or basically, an eggplant salad. Some use more ingredients on their salad but on Mon's version, it is just onions and tomatoes. She also had a sauce for it which is just a mix of calamansi and salt. A healthier version, lol.

And with all that, everything's really set.
