Barbecued Sausages, Beef Ribs, and Lamb

Yesterday was the Super Bowl, guests were coming over, and you know how it goes: if people are going to hang out at my place, they’re going to eat well. So the smoker got fired up early and stayed busy all day.

The main event was a smoked beef brisket, of course. That’s my anchor. I let it go low and slow until it hit that perfect tenderness, then wrapped it and let it rest in the oven. Resting is where the magic settles in, so I don’t rush it.

While that was happening, I kept the smoker loaded with sausages, smoked beef ribs, and a smoked rack of lamb. Yes, lamb. I like throwing in something unexpected just to keep things interesting.

The rack of lamb also gets a little oven time to hold until serving. It stays warm, stays juicy, and comes out tasting like something you’d order at a fancy restaurant.

The ribs get special treatment. They’re the only thing I sauce before wrapping.

I hit both sides with sauce — not drowning them, just enough to give them that sticky, glossy finish once they steam in the foil.

Then I wrap them tight with a double layer of foil. That’s the moment where I always say, “One down, three to go,” because once the ribs are wrapped, the rest of the lineup starts falling into place.

Here is my Go‑To Barbecue Sauce for Beef Ribs

Ingredients

  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/3 cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1 tbsp soy sauce
  • 1 tbsp hot sauce (optional, but I like a little kick)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • Pinch of cayenne (optional, if you want it to bite back)

Instructions
Add everything to a saucepan. No special order — just dump it in.
Bring it to a gentle simmer over medium heat.
Stir occasionally and let it bubble for about 10–12 minutes until it thickens slightly.
Taste it. Adjust it. Make it yours.

Want sweeter? Add more brown sugar.
Want tangier? Add a splash more vinegar.
Want heat? Cayenne never hurt anybody (well… maybe a few).

Let it cool a bit before brushing it on the ribs.

How I Use It
I only sauce the beef ribs — nothing else. I brush both sides, get them nice and glossy, then wrap them tight in double foil. The sauce steams into the meat and gives you that sticky, smoky, slightly caramelized finish when you unwrap them. It’s the kind of thing that makes people stop mid‑sentence.

Eventually everything was done — ribs, lamb, brisket, sausages — and the kitchen looked like a small barbecue festival.

My friends started making plates, comparing favorites, and going back for seconds.

Some folks like horseradish and Worcestershire with their ribs, which always cracks me up, but hey, I’m not here to judge. If it makes them happy, go for it.

And the best part? No leftovers. Not a single rib bone, not a slice of brisket, nothing. That’s how I know it was a good cook. When the smoker works hard and the guests leave full, that’s a win in my book.

My own homemade BBQ sauce is very similar to yours, I dialed down the heat factor tuning it to my boy's taste. Beats most off-the-shelf brands without the extra chemicals.

Looks delicious! I've never had lamb outside of gyros before. I have a feeling I would enjoy it though.
