Adding cheese to meat loaf, specifically cottage cheese is something I find tasty. Some people find this really weird, but I like it. And it can make for a hearty meat loaf. Will take me a week or so to eat it all. I have made it a few times so figure I should share how I make it.
First I take three pounds of ground beef and 0.75 pounds of cottage cheese and a mix of spices and set them up.
I form a pocket for the cottage cheese to go. And keep enough ground beef off to the side to top it once the cottage cheese is inside.
With all the spices mixed into the ground beef, and the two parts ready to go I will add the cottage cheese shortly.
Ah perfect, maybe a bit too much. We will know when we start baking it if its too much.. it will start to ooze out.

There we go, with some kneeding I got it all covered and pinched it the best I could around the edges.
You would never know its filled with cottage cheese.. lol
Time to go in the oven. I cook it at 350F for about 45 minutes.
Eventually its time to flip it.
We can see it starting to ooze out, but not too much.
Once flipped I cook it again for another 15 minutes or so. And its all ready to go.
