It was a cool day with thunderstorms rolling through, baking seemed like a good way to keep busy. I had a few chopped apples that I had frozen, and they needed to be used.
Apple Muffin Cookies
6 medium-sized apples, peeled, cored, and finely chopped \par
Blend with a mixer:
1 1/4 cup of brown sugar
3/4 cup of sugar
2 sticks softened butter (plus more for cooking apples)
1 teaspoon vanilla
2 eggs
Blend well until all wet ingredients are combined. Stir in the chopped apples, I tossed them with a little sugar and allspice before adding them to the batter.
Sift together:
1 1/4 cups of flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
Add the sifted dry ingredients to the wet mixture, add 1 3/4 cups of rolled oats, and stir until incorporated.
Once thoroughly mixed, using a cookie scoop, fill the muffin cups. I like using silicone cups which makes it easy to remove them.
Time to bake the muffins @ 350°F for 25-30 minutes, check them by inserting a toothpick in the center to make sure they are completely cooked.
Cool them on a rack after removing them from the silicone cups. Notice that they are not high and fluffy, but denser due to the oats. They are tasty non the less, hubby keeps walking by and sneaking one after another. He has such a sweet tooth!
Once the muffins cooled, I put them on a parchment-lined tray and froze most of them. The following day I vacuumed-sealed 4 into each package. Hubby can take them out of the freezer whenever he has the urge for something sweet.
Today, is cool and it's raining once again, I will have to find something else to bake, oh my!
