
I don't know how time goes by so quickly before I catch up with editing photos for postings. Then they sit in the cue, waiting to be shared with all of you. Do any of you have a hard time finding enough time to get it all done?

Last fall, I processed some of my Zucchini into syrup/jam. It makes a nice glaze for chicken or pork. On this day, I used it on pork ribs for that night's dinner.

I always simmer my pork ribs before putting them into the air fryer to finish them. This glaze is perfect in my opinion, and a favorite now.

It only takes about 12 minutes to get a nice browning on the ribs in the air fryer.

For the sides, I made a spinach salad with radish and Feta cheese. Plus, I had my favorite Grandma's Coleslaw too. Hubby asked for some cranberry sauce, and I had a tablespoon of it as well.
It is sometimes a challenge for me to avoid carbohydrates while following a Keto diet.

I do eat a lot of salads, even with that, I still seem to have stalled with dropping weight.

I made a large batch of chickpea salad, and that became my side dish for meals. It's a nice salad, and very filling too.

I'm going to focus on avocado, greens, and sardines for lunch this week. Hopefully, that will put me back into ketosis. Eating high-fat meals is supposed to help me to burn off fat rather than store it.

Living with an Italian husband makes it a bit tough to stay away from carbs, especially at dinner time. He loves pasta, bread, and cookies, lol.

I made a large kettle of spaghetti sauce and put most of it in the freezer. That night we had spaghetti with meatballs, and of course, garlic bread.

Dang, it was so good! The following day, I only ate salads since I indulged in so many carbs.

I put a little tuna fish on the salad for lunch, which helped me fill up until dinner that night.

With this salad, I had a leftover chicken breast in the fridge, so I cut that up and tossed it on the salad for dinner.
This week, I'm determined to behave myself by eating a lot of veggies, salads, and sardines, and get myself back on track with #intermittent #fasting too. I found I was getting hungry earlier in the morning, when I normally don't eat until 1:30 p.m. I'm sure that is one of the reasons for the scale not going down....sigh.
Well, at least I used some of my edited photos today. Perhaps tomorrow I will use a few more.
