Comfort Food - Chicken & Bean Soup - by Sunscape

What is it about winter that makes one want comfort food? This week I pulled some of the vegetables out of the freezer and cut up a good-sized chicken breast to make soup for dinner.

I sauteed some white onions, celery, and carrots that I grew, added in a Lemongrass wand with some fresh basil.

Once the veggies were softened a bit, I added salt, pepper, and a quart of homemade vegetable stock. After simmering the soup for about an hour, I added a can of Canelli Beans and a package of spinach I had put up. Plus, I had some leftover brown rice from an earlier meal that week and threw that in too. It thickened up the broth nicely and gave it a creamy texture.

Apparently, I didn't secure the Lemongrass to well, so my husband took it out of the soup and held it for a photo shot.

Even though I've been following a low carb diet, this soup was soooo good! That Lemongrass gave it such a lovely flavor, and my husband raved at how different the wand made the soup taste. I guess I will find more ways to make use of all the wands I made this fall.

Of course, I had to sprinkle in some Ramono Cheese and red pepper flakes for a little extra goodness. I love comfort food, don't you?

Very good looking soup! I am now hungry. You could find lemongrass for your cooking. Interesting! This makes the soup very tasty too.

I grew Lemongrass last summer in my garden and found a You Tube video on how to make my own wands. That was fun and I have them frozen for when I want to use them. They make soup and dishes so tasty. I'm hooked on Lemongrass. Dried some for tea too!

They really are fun to make, and the Lemongrass adds such a mellow Lemon flavor to any dish you use it in. I still haven't tried the dried for tea yet, perhaps today is the day. We got slammed with 5 more inches of snow. It is now knee high out in the yard. My poor husband is exhausted keeping up with it all. I shoveled a lot and put a hurting on my back so now I can't help him.

Did you get another round like we did? I see it is hitting N. Carolina next. I had to drive home from an appt. Thursday on the interstate going 25mph with hazard lights on as the snow was so thick you could not see to drive, and the roads were like ice. That was intense! There was a bad 30 vehicle pileup near Batavia that day too and that is just 30 minutes from me. I'm ready for spring to come.

No just the one, in 4 waves, ending Monday night. The one off the coast now is supposed to miss us entirely here in the valley but go up the coast and whale the daylights of Nova Scotia. We just have the deep cold and sunshine. I can't wait for Tuesday when it warms up!
