Craving a burger with bacon when you're on a low carb diet is fine, except when I put it on a Ciabatta roll, lol. I mean, I could have had it without the roll, but dang it would not have been the same.

I did make a side of roasted Brussel Sprouts and heated up some leftover Egg Frittata. Well, at least I had plenty of protein for dinner, right?

I do have a salad for lunch practically every day, so I thought why not enjoy a few extra carbs for a change. Sticking to Keto-low carb meals is hard when I cook meals for my husband who has no problem with insulin resistance, like I do.

This week, along with a salad with Avocado, I will be eating a tin of Sardines each meal to get back on track with a higher fat content to burn visceral fat instead of carbs that like to be stored around my mid-section. At 70 years old, getting of extra weight is a bit challenging but I am doing my best to eat healthier.

At least eating a lot of salads, sometimes for lunch and dinner, has helped me to stay on track. My goal is to drop a minimum of 25 pounds before summer. I really believe I can get there so that when I am gardening this year it won't be so hard for me physically to do so.

It was a darn good burger if I may say so myself and seeing the photo is making my mouth water, sigh...
