Well, I had some fun this week in the kitchen. I was going through some old recipes I had saved over the years; I had so many different chocolate chip recipes and oatmeal raisin ones that I decided to marry the two.
I adjusted the liquid portions to dry according to the added oats. Many of the recipes were similar, but a few had extra ingredients that put them over the top. After going through my baking pantry to see what I had on hand, this is what I came up with.
Sunscapes Chocolate Delight
Cream together:
1 cup of butter
1 cup of white sugar
1 cup of brown sugar
2 eggs
1 teaspoon of vanilla
Sift together:
2 3/4 cups of flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
Coarsely chop: (in a food processor)
1 1/2 cups of oatmeal
1 cup of walnuts
1 cup of sunflower seeds (if salted, omit the 1/2 tsp. of salt)
Coarsely Chop: (by hand)
6 ounces of Chocolate Almond Bark
6 ounces of White Almond Bark
1 cup of Hershey's chocolate chips
- Add the chopped ingredients with the sifted flour. Mix well and then add the wet ingredients to make the dough.
- Scoop the dough onto a parchment-lined cookie tray 2 - 3 " apart.
- Bake 12 - 15 minutes in a 375°F. oven until golden but not over-baked.
- Transfer to cooling rack.
These came out so light and airy with a nice sweet-salty ratio. The finely chopped oats and sunflower seeds really took this cookie to a new level.
I now have a new all-time favorite cookie and will add it to next year's cookie giveaway trays. These are absolutely divine! Perhaps you will give my cookie recipe a try and see for yourself.
