Grandmas Zucchini Cookies

Preheat oven to 350℉.

Sift Together:

2 cups Flour
1 teaspoon Baking soda
1 teaspoon Cinnamon
½ teaspoon Salt

Cream Together:

½ cup Butter, softened
1 cup Granulated sugar
1 Egg, beaten

Add:

1 cup Zucchini, grated
1 cup Golden raisins
1 cup Walnuts or Pecans, chopped
1 cup Semi-sweet chocolate chips

Note: I omitted the raisins and added toasted sunflower seeds instead of the nuts.

Scoop the dough onto a parchment lined cookie sheet 2" apart and bake 15-25 minutes. Don't overbake!

This recipe made a very moist cookie which reminded me of zucchini bread. It was a nice way to use some of the abundant zucchini this summer.

I love all the things we can do with grated zucchini! I need to thaw some and bake cookies or bread for my husband.

That's what I did, the cookies came out great. I still have lots in the freezer to make things with over the winter. I had a nice amount from the garden this year. Have fun spoiling your hubby.

Oh, I've made something similar, and I loved the result, but I might do even better if I follow your recipe with chocolate chips ❤️

You should give it a try and add chocolate chips to the cookies; it adds a nice touch.
