I have been missing having some fresh, dark greens from the garden so this week I decided to get some from the grocery store. By the time the snow is flying in January and February, I really miss my garden. I decided to make a Frittata for dinner.
I pre-cooked my spicy sausage and let it drain while preparing the rest of the ingredients.
I don't follow any particular recipe as I usually use whatever I have on hand at the time.
On this day I used Swiss Chard, shredded potatoes, sweet sausage, onion, garlic, eggs, cheese, and seasonings.
After washing the potatoes, I grated them leaving the skin on. Chopped up the Swiss Chard, onion, and garlic.
Simply saute your onion until translucent then add the garlic. The potatoes go in the pan next and the chard on top of the potatoes. Let the greens wilt slightly. I had a little corn left from a previous meal so I tossed that in too.
Whisk whatever seasonings you choose to use with the eggs, I use 6 or 7 each time I make it in this pan, then pour the eggs on top of the chard.
Sprinkle shredded cheese on top and cover the pan with a lid. Let it simmer until thoroughly cooked and the cheese has melted. Serve immediately and enjoy this simple one-pan meal. Also, don't forget to use some of your favorite hot sauce as that just gives it that extra kick.
