Enjoy DADIAH: a mouth covering made from West Sumatran buffalo milk fermentation

There are so many culinary specialties from my country from various tribes. Each tribe can produce various kinds of special menus that are born from their customs. And now I will share one of the typical food menus originating from West Sumatra, precisely in the city of Padang. This is the first time I have eaten this menu called DADIAH, and in my personal opinion this is considered a dessert or just a thirst quencher.



What is DADIAH? Dadiah is fermented buffalo milk, and it is said that buffalo milk is mandatory because if you use cow's milk or goat's milk the results will be very different. This buffalo milk is fermented in bamboo and tightly closed. However, I don't know how long this buffalo milk is fermented and is ready to be processed.



Then the buffalo milk that has been fermented is topped with cooked sticky rice, of course, then sprinkled with melted palm sugar and topped with grated young coconut, finally topped with chunks of ice and the white ones like tofu flowers are the result of fermentation. buffalo milk, I thought it would be liquid like milk or like yogurt, but I was wrong because the shape was very solid but chewy like pudding or tofu and still white. To be honest, I was actually afraid to eat this, because I thought it was very foreign and not It makes sense, but when I tried it and judged it with my tongue, it turned out to be very surprising.



When it entered my tongue, the taste produced from fermented milk was very different from yogurt. So don't imagine what it's like going there, friends. The taste of DADIAH or fermented buffalo milk is like TAPE, namely cassava with yeast. When I put the DADIAH into my mouth, it felt like there was a slightly fresh sour taste combined with the sticky rice and the sweetness of the palm sugar and the ice cubes that made this dish have a perfect score in my mouth. This is very surprising, and it doesn't taste as bad as drinking liquid milk.



Even my wife, who doesn't really like milk, loves this dish. quite fresh in the mouth, especially when summer arrives. And what is clear is that it is healthier because it does not use chemical preservatives or artificial sweeteners or anything else. If you want to buy just the DADIAH or this fermented buffalo milk then that is totally permissible. This DADIAH can last for 6 days at room temperature and can last longer in the refrigerator. If you buy this DADIAH you will be given a bamboo container like the one you see in the picture above.
