I'm gonna share another pasta recipe today. Well, my family members are certified pasta lovers, especially my daughter @tegoshei. As we all know, pasta can be unhealthy, but it can be healthy too.
Yes, pasta can be considered a healthy food or a part of a healthy diet but only if we consume it in moderation and if we choose healthy sauces and toppings. Most of us might be using processed or ready-made sauces for pasta dishes. I do that too, but this time I chose the healthier sauce. It's mainly fresh tomatoes with just a little bit of tomato paste.
So, let me share with you my "Fresh Tomato Pasta with Chicken Fillet Toppings".
Fresh Tomato Pasta with Chicken Fillet Toppings
INGREDIENTS:
- Tomatoes
- Tomato Paste
- Macaroni (Twirl Pasta)
- Chicken Fillet
- Mushroom
- Evaporated Milk or Fresh Milk
- Onion
- Garlic
- Spring Onion
- Cheese
- Soy Sauce
- Ground Black Pepper
- Paprika
- Garlic Powder
- Canola Oil
- Water
- Maggi Magic Sarap Seasoning
- Salt
PREPARATION:
Clean and wash the chicken fillet thoroughly. Cut them into strips or smaller pieces. Marinate the cut or sliced chicken with soy sauce, paprika, ground black pepper, and garlic powder. Then set aside.
Wash the tomatoes and then slice them into small pieces.
Peel and wash the onion and cut it into small pieces.
Crash and peel the garlic then cut them into small pieces.
Wash the spring onion and cut it into small pieces.
Grate the cheese. And set all the ingredients aside.
COOKING TIME:
Prepare the cooker. Pour some water, add a pinch of salt and a tbsp of canola oil. Put on the heat and bring it to a boil. When it starts to boil, add the pasta. Stir occasionally until it becomes "al dente" then drain the pasta while reserving some pasta water for the sauce later. Then set them aside.
Heat a small amount of canola oil in a cooker or pan. Sautee onions and garlic until fragrant.
Add the marinated chicken, and stir until it becomes light brown.
Then add the fresh sliced ripe tomatoes until it melts and the juice comes out. Add some tomato paste, (depends on your desired taste).
Add the mushroom and stir to combine. Then add the water from the boiled pasta.
Season with ground black pepper, Magic Sarap, and paprika to add more flavor and color.
Continue cooking until the sauce is reduced.
Add the pasta that was set aside earlier as well as some sliced green spring onion. Stir carefully. Then finally, sprinkle some cheese.
And it’s all done, this is how beautiful and delicious-looking my "fresh tomato pasta with chicken fillet toppings” is. It was a feast! 😊
Transfer it to a serving plate. Serve and enjoy eating. 😋🍽
