Adobo was one of my favorites when it wasn't yet off-limits food. I love my Mom's adobo. It's not the kind of adobo that I tasted in the restaurant or anyone who cooks adobo. May it be chicken or pork? Her adobo is the dry type, and she puts a lot of garlic, ginger, and red pepper, which makes the adobo "muy sabroso y aromático" because of the spices, with less cooking oil and soy sauce, which isn't good for our kidneys.
