The rain started early today, so we had to stay at home, take a short pause from our almost daily strolls, and give ourselves some warmer cups of coffee and tea.
Later, at noon time, I craved something warm, something tangy, and something savory for lunch. So I went outside and found myself in our local market and looking for something that could satisfy my cravings.
And I bumped into this stall of fresh shrimps, and I decided to cook our traditional Filipino soup that always warms every Filipino heart. The sinigang na hipon. A tangy and savory shrimp soup that is loved by every Filipino, from all walks of life.
Usually, Sinigang starts with boiling water in a casserole and slowly puts the ingredients into the boiling water. But for me, I prefer to start it with the sautéing of spices to make it more savory and mouthwatering.
So, let's go to my little kitchen.
Recipe: Sinigang na Hipon
Cooking time: 20 minutes
Ingredients:
350 grams of fresh shrimps
1 liter of tap water
A pack of Knorr Sinigang Mix (good for 1L of water)
2 medium tomatoes
1 piece of ginger
5 cloves of garlic
1 medium bulb onion
A bunch of spring onions
A small piece of cabbage
A bundle of lemon grass
String beans and water spinach (optional)
How to do it?:
Prepare the ingredients, thoroughly clean the shrimp, and drain the water. Prepare the spices and leaves.
Heat a pan or a casserole, add a tablespoon of cooking oil, and saute the garlic and onions, followed by the ginger and tomatoes.
When the tomato juice starts to ooze, quickly add the drained shrimp and stir until it turns orange. You need to let the tomato juice ooze; this is the best way of having a savory, orange-textured soup.
4 When the shrimps are already done, add a liter of water, put a bundle of lemon grass, and cover the pan or the casserole.
5 Once the mixture starts to boil, open the cover, immediately add the Knorr Sinigang Mix, followed by the spring onions and cabbage strips.
6 Let it boil again for 2 minutes, and do not cover the casserole, or it will change the color of your leafy greens into lousy brown once you cover it.
And here we go, we are now ready to serve our warm, tangy, savory Sinigang na Hipon.
