Hello everyone. How are you today? I hope all is well with you and your family. In the rainy season is the bamboo shoot season. This year the rainy season in Thailand started on May 15th. It rains almost every day. Now there are some bamboo shoots in the home garden. Although there are not many bamboo shoots in the home garden. And the bamboo shoots are not big. But my wife and the wife's mother can harvest them to cook. This time my wife harvested bamboo shoots to cook stir-fried curried with preserved bamboo shoot and chicken.
My wife and the wife's mother harvest bamboo shoots in the home garden.
When my wife harvested the bamboo shoots, she peeled the bamboo shoots and chopped them.
Then pickle chopped bamboo shoots with water and salt for about 2-3 days.
When the bamboo shoots have been pickled for 2-3 days. And she have pickled bamboo shoots. The preserved bamboo shoots can be used for cooking.
There are other vegetables for this dish too. And she picked them from the home garden. What vegetables are there in the home garden? And my wife use as ingredients for this dish. Let's go.

Ingredients for stir-fried curried with preserved bamboo shoot and chicken.

- glass noodles
- shrimp paste
- garlic
- shallots
- dried chilli
- pork flavour seasoning powder
- oil
- water
Ingredients
How to cook stir-fried curried with preserved bamboo shoot and chicken : First crush the garlic, shallots, turmeric and dried chilli using a pestle and mortar.
Then crush the shrimp paste with all the ingredients using the pestle and mortar again. To make curry paste.
Put the pan on the stove and heat a little oil. Add the curry paste in the pan and stir-fry until cooked and fragrant.
Add the chicken in the pan and stir-fry the chicken with the curry paste until the chicken is cooked.
Add the preserved bamboo shoots in the pan. Then add a little water and stir-fry for a while.
And add the kaffir lime leaves in the pan.
Then place the banana leaves on the pan and put on the lid.
Steam all ingredients for about 20 minutes. Then remove the lid and banana leaves.
Then add the basil, culantro and spring onions to the pot and stir-fry.
Then add the glass noodles in the pan and stir-fry until the glass noodles are cooked.
Season with pork flavour seasoning powder and turn off the stove.
It's finished, stir-fried curried with preserved bamboo shoot and chicken.
