ASEAN Hive Community Challenge: Coconut Milk Creations, Chicken Curry

Hello, how are you? A few days ago, my cousin was craving for curry, but I cooked the chicken in another recipe LOL. You know what it feels like to be expecting something but not. So I feel bad about it, and that is life, but yeah, their still morning, so yeah.

So the next day we bought the ingredients for it, and the cravings were satisfied! I was scrolling through my feed, and I saw ASEAN posted for this week's challenge is about cooking using Coconut Milk. And of course, I need to join the challenge. Coconut milk is a must ingredient for many recipes, so we tend to store a lot some it in our fridge or pantry.



Ingredients I Used:

  • 1kg Chicken
  • 3 Potatoes
  • 1 Red Bell Pepper
  • 1 Large Carrot
  • 4 Cloves Garlic
  • Red Onion
  • Small Ginger
  • 2 tbsp. Fish Sauce
  • 1/4 tsp. Ground Pepper
  • 2 tbsp. Curry Powder Seasoning
  • 4 cups Water
  • 1 Chicken Broth Cube
  • 250 ml Coconut Milk


Let's Cook!

In a hot pan, I added cooking oil to the pan.

And then I added the potatoes and cooked them until they started to brown. I like to fry my potatoes, which gives a unique taste to the food. I set it aside for later.

After that, I added the carrots and bell pepper, and cooked them for just a minute.

I reduced the cooking oil I used earlier and, in the same pan, added the chicken, cooking it until the browning started.

Then I added aromatics like garlic, red onion, and ginger, and cooked them for about a minute.

Then I added 2 tablespoons of fish sauce. And let that seep into the chicken for about 30 seconds.

Then I added about 1/4 teaspoon of ground pepper.

For the curry seasoning, I added 2 tablespoons of it and mixed them together until well.

Then I added 1 chicken broth cube.

Then I added 4 cups of water.

Let it cook for about 10 minutes at first because I am going to add coconut milk.

When the timer comes off, I am going to add coconut milk.

Close the lid and cook it for about 10 minutes or until oil starts appearing on the side of the pan.

Then I added the potatoes, carrots, and bell pepper.

And cooked them for about 5 minutes. Now the curry is cooked! ready to serve.

Serve hot and plated!

That chicken curry looks incredibly delicious. I can almost smell the fragrant aroma of the curry powder from here, and it gives your dish such a beautiful, appetizing color. Good luck with the challenge! 😃😃

@leannwithdoublen cocomama is a game changer, it's very close to the natural gata (coconut milk) -so it's the best alternative

I actually miss chicken curry na! I should make this too soon 🤤. As in super tagal na last kain namim nito. Iba lang version ni motherbels nito, this one looks really flavorful 🤤🌟

Your chicken curry looks so comforting and delicious! I love how your fried the potatoes first, such a smart way to add extra flavor.
