Chicken Afritada with Beans and Spinach

Hello, how are you? I decided to cook early today, and to avoid clutter, whenever my brother cooks, he always makes a mess in the kitchen, which pisses me off so much. I am the one who always gets blamed for the mess I didn’t make.

Sorry for that, I just want to say what I felt because it is too much. LOL, but I am okay now. By the way, I am craving for chicken afritada or menudo, I don’t know, but I call it afritada hahaha. I added beans and spinach to it, or should I name it chicken cooked in tomato sauce, LOL. It has been months since we ate this dish, so I am going to cook it.



Ingredients I Used:

  • 1 Kilo Chicken Breast
  • 1 Carrots
  • 1 Bell Pepper
  • 2 tbsp. Fish Sauce
  • 2 tbsp. Tomato Paste
  • 200g Italian Spag Sauce
  • 3 cups Of Hot Water
  • 100g Pork and Beans
  • 2 tbsp. Cheese
  • 1 tsp. Brown Sugar
  • 1 tbsp. Butter
  • 1 Chicken Broth Cube
  • Spinach
  • Cooking Oil
  • 3 Potatoes
  • Ground Pepper
  • Celery
  • 4 Cloves Garlic
  • 4 Small Red Onion


Let's Cook!

In a hot pan, I added about half a cup of cooking oil.

When the oil is hot enough, I fried the potatoes and carrots.

Until they changed color, after that, I set them aside for later.

In the same pan, I reduce the oil I use and leave about a tablespoon of it. Cook the chicken in the pan.

I cook it until the color and the texture of the chicken turn brown and crispy.

Then I added a dash of ground black pepper.

I added the aromatics like garlic, red onion, and ginger, along with celery and bell pepper cook them until

I added about 2 tablespoons of fish sauce, and let the sauce seep into the chicken for extra flavor.

I added 2 tablespoons of tomato paste for vibrant color and to thicken the sauce.

I added about 200g of Italian spaghetti sauce for a unique taste. Mix all.

I pour about 3-4 cups of hot water.

Then simmer it on medium heat for 15 minutes.

After 15 minutes, I added 100 grams of pork and beans.

2 tablespoons of cheese for a creamy taste.

To balance the taste, I added about a teaspoon of brown sugar.

I almost forgot to add butter, I added about a tablespoon for a unique taste, too.

To season the sauce, I use a chicken broth cube.

Mix them all and simmer on medium to low heat for another 15 minutes.

After 15 minutes.

I added the potatoes and carrots I fried earlier. Simmer them for about 5 minutes on medium to low heat.

After that, I added the spinach and cooked it for about 1-2 minutes only on low heat. And done!

This chicken afritada looks amazing I never tried this dish but seems like a chicken stew but more flavoured!!
