Hello, how are you? My cousin got home for a week of vacation, and he asked me to cook Chicken Afritada for our dinner. I have been craving it for a week now, and I am waiting for peeps to request it. But still confused about the difference between the famous Mechado, Menudo, Caldereta, LOL I know some of you relate to this.
Ingredients and Prepping:
- Chicken 1kg
- 5 tbsp. Cooking Oil
- 3 Potatoes
- 1 Carrots
- 4 Garlic Cloves
- 1 Red Onion
- 1 Ginger
- 1 tbsp. Fish Sauce
- 115g Tomato Sauce
- 1 tbsp. Tomato Paste
- 4 Cups of Water
- 1 Chicken Cube Seasoning
- Half tsp. Ground Pepper
- 3 Laurel Leaves
- Half tsp Cayenne Pepper
- 5 tsp. of Milk
- 1 tsp. of Brown Sugar
Cooking Time!
In a hot pan, I added 5 tbsp of cooking oil.
When the pan is hot enough, I added the potatoes and fried them until browning starts appearing, and then set them aside.
After that, I then fry the carrots, and then I let them cook for about 1 minute. Just enough for it to cook. And then I set it aside.
After that, I then remove some of the cooking oil and leave 1 tbsp of it. And then I added the chicken in and let it cook for browning started appearing.
Next is I added the garlic, red onion, ginger, and then bell pepper, let it cook for about a minute or when the aroma comes out.
I added 1 tbsp. of fish sauce and let it seep into the chicken.
Next, I added a pack of tomato sauce.
Then, after that, I added 1 tbsp. of tomato paste, which makes the sauce thick. Mix them until well combined.
Then I added 4 cups of water.
To make it more savory, I added 1 chicken cube seasoning.
Then I added a half tsp. of ground pepper.
Then I added 3 laurel leaves.
We love a little spicy on it, so I added about a tsp. of cayenne pepper. This is optional if you like it spicy, add to your liking.
Then let it cook for about 15 minutes or until tender, or until the sauce thickens a little bit.
After that, I added the potatoes and carrots I had fried earlier. Then let it cook for about 5 minutes.
Then, to make the sauce creamier, I added 5 tbsp of milk.
To balance the flavor, I added a tsp. of brown sugar. Let it cook for about a minute.
I garnish it with dried parsley just for the photo, LOL. Serve hot and plated.
