The mother-in-law of the daughter of my boss have a farm. They provided us vegetables according to what is available in their farm like papaya, eggplant, lady finger,and spinach.
Last other day, I woke up earlier and found giant eggplant in fridge. No wonder, I got it my mind that they gave us. So, I cooked some of it. My lady boss like it when being fry and garnish with smashed garlic with hot chili. But for me, I loved being grilled, put eggs or just eat it with venigar and salt.

The Process
Grilled in the top of the oven burner.
Peeled off and ready to eat with salt and venigar but part of it was mix with eggs onion and garlic with black pepper.
It was not easy to flip it because it's too big but I didn't want to cut it. Imagine, that is only one eggplant I grilled but a lot of meat inside. It might've equivalent to 5 pieces of long eggplant variety.
I covered it with another cooking pan flipping it upside down to avoid cuts. I didn't use vitsen or ajinomoto to enhance taste. Then , I ate it with arabic bread without yeast.

Let's eat healthy food everyday. I am now eating vegetable and no to meat. I am getting older and I want to be healthy. They said that eat all you can, life is too short but I can't do it. Anyway, my boss is not buying meat this time, it's blessing in disquise.
