🙏 Hello, friends!!... I hope everyone is doing well and have a great weekend!! 😍.... For this post, I’m sharing a recipe I made for dinner last night. That is spicy stir-fried noodles. I used instant noodles, which already come with seasoning packets, right? But I wanted a richer, more Thai-inspired flavor, so I added extra seasonings. It turned out even tastier than I expected! I also added some veggies since I had broccolini (baby broccoli) in the fridge, so I used some of that and threw in a bit of carrot too. The prep and cooking process was simple and didn’t take much time. Let’s take a look together!
🥕Ingredients and Seasonings :
For 1 Serving🍜
- Instant noodles: 1 bundle
- Broccolini: 2 stalks
- Carrot: 2 tablespoons
- Egg: 1
- Seasoning (included in the noodle packet)
- Dried chili flakes: 2 teaspoons
- Garlic: 3-4 cloves
- Fish sauce : 1 tablespoon
- Cooking oil: 1 tablespoon
🥦 Preparation of ingredients
Prepare the Broccolini (Baby Broccoli)
- First, rinse the broccolini under water, then soak it in water mixed with baking soda. I usually soak it for about 10 minutes, then rinse it again with cold water. Cut it into bite-sized pieces, then blanch it in boiling water. After blanching, immediately transfer it to ice water to cool. Let it drain well. This method will keep the broccolini crisp and maintain its vibrant green color, making it look delicious. Give it a try, friends! 👍
Prepare the carrot and garlic
- Peel them, wash with water, pat dry, and cut into bite-sized pieces. The shape can be whatever you prefer.
- Peel the skin, wash with water, pat dry, and then chop it. I chopped it roughly.
Preparing the Noodles
- I parboiled the noodles in boiling water until they were almost cooked, then drained them in a colander to remove excess water.
🔥 Cooking time
- I pour vegetable oil into the pan and add chopped garlic, stir-frying until fragrant. Actually, you don’t have to add garlic, but I love eating garlic fried in oil because it’s very aromatic and makes the dish more delicious.
- Add the eggs and stir-fry until almost cooked, then add the prepared carrots and broccolini. Stir-fry everything together until well combined.
- Add the pre-boiled noodles and stir-fry everything together. Season with seasoning powder, granulated sugar, fish sauce, and dried chili flakes. Stir-fry again until well combined, then turn off the heat. Plate it up and serve.

- This dish has a rich and spicy flavor from the seasoning powder included in the packet and the additional ingredients I added. The noodles, boiled until just tender, provide a chewy and soft texture when stir-fried. The broccolini and carrots are crisp and sweet, pairing perfectly with the noodles for a delicious and harmonious taste. I really love this dish. it’s perfectly satisfying in one serving.
