
I escaped having chicken meat today, THANKS HEAVEN! the only available fishes in the market is EXPENSIVE FISH -lol, a lil expensive fish -like Salmon and those red fishes, Tilapia, Big Fishes, Milk Fish, and some others. And because I don't like any of those I decided to make omelette with two kinds of veggies. I made two because according to the Mommy D potato is bad for Mommy F, so I chose carrot for her. This is not a super healthy dish but it can save us from having chicken meat again. Lol. I'd rather have this than eat chicken again, lol. I feel like I can go on in my life without eating chicken for a year, haha -ahhh, but I can't say NO to fried chicken actually ⊙.☉
So here's the ingredients:

2 pieces of palm sized potatoes
1 pieces of carrot
3 pieces of large eggs
Unlimited garlic
1 big onion
Salt to taste
Seasonings or MSG
Margarine
Cooking oil for frying

We'll start by cleaning, peeling and cutting the carrot and potato. I cut them into smaller sizes, I mean, it's omelette we'll making so we have to cut them into small size. You can just grate them if you want, do what your heart desires

Next is frying all the veggies -separately! Seriously, I usually just boil the veggies when I made potato omelette but this time, to add some flavor in it, I decided to fry them using just small amount of vegetable oil. I already added salt in there by the way. And I only fry them for like two minutes then I strained them using a strainer to remove the excess oil. I even used tissues for that

So next is the Potatoes, this time I used a bit of margarine in it though not that much. Adding this give the potatoes a different taste on it. Love it!

While i'm waiting for the potatoes to cool down, I started seasoning the carrot, I just put salt, lil bit of MSG, just tiny bit, then the garlic and onion. Mommy F doesn't want pepper so that's all the ingredients. She doesn't want flour in it too, same as me. Ehe

A poured a big one using s big spoon then started frying it. I covered it and coz its already cooked frying it with a few drops of oil didn't take that long

And its done! I think its just perfect.

So next is the potatoes, I just mix it with salt and MSG, i added the two eggs, onion and garlic in it then mix it well.

Frying time. I did the same here too, with just a bit of oil and fry it for a few minutes. Good right? Hehe

And its done! I seriously love how it is seasoned. Not too salty, its just right. Not so oily too because I didn't use a lot of oil. And I think, not mixing flour in it helps coz it didn't take a lot of time for it to be cooked..nom nom!

Right after pan frying all the carrot and potato omelette, I also fried the rice without much oil in it and had our lunch together. I also shared some to Mamabels, uwu. It is an enjoyable lunch even with a simple meal. Because of the potato, I didn't eat much rice, thanks to it. Hehe
And let me also share how much I spent on the veggies and egg, for the carrot and potatoes, that tree are already 60 pesos, almost a dollar. For the egg I spent 27 tor three. As for the other ingredients, all of them are still available in Our pantry so overall, I only spend 87 pesos in it. Of course if you don't have the other ingredients, you'll have to spend on them too. So for me, this is already a budget friendly dish. And this is already good for two meals for each, lunch and for dinner ෆ╹ .̮ ╹ෆ.
