As usual, we always start the day early because of the errands we need to run everyday. And this morning, we woke up around 5:30, which is already too early here in the province. Since we have a lot of time to prepare for breakfast, we have decided to make some banana pancake.
It is also because we saw some overripe bananas on the refrigerator. We do not want them to go to waste, so why not make a breakfast out of them. First, we need to prepare the ingredients. We bought some flour, eggs, butter, and a condensed milk.
We started peeling off the overripe bananas, and we got 4 pieces of them. After that, we put them in a bowl and started smashing them until the perfect texture was achieved. It is to make sure that the pancake will be perfect in shape.
Once the bananas are ready, we started mixing the other ingredients in the bowl. We added the flour, some sugar, and the eggs. Our niece started mixing them all. They should be mixed well, and our little girl is doing a great job in here. She was so happy when we let her help us.
When the mixture was good to go, we heated the pan and put some butter in it. We are not using cooking oil, and chose to buy butter instead. It is also the one of the secrets in making the pancake tastier. Once the butter has melted, we already put the mixture little by little, to form a round shape. We started cooking in a low heat to avoid the pancakes from getting burned.
After a few minutes of cooking nonstop, the banana pancakes are now ready for breakfast. We partnered it with a cup of coffee, perfect for the rainy season here. And since there was no available maple syrup in the small grocery here in our place, we bought condensed milk to add more flavor.
Our niece and nephews loved the breakfast we prepared, especially because of the sweet condensed milk that balanced the taste of the banana and a bit of sweetness.
