
Introduction
Good day to all, been a while since I write in the community. Schedule is a little hectic and at the same time, business is doing rather well, hence most of the time I am out working at event places.
This event was a Deepavali celebration for Seacare which takes care of seamen and their families in Singapore. Didn't knew we had such a unique organisation but I am really thankful that it existed. When I arrived at the event space to do my setup, I can feel the joy of the organisers and at the same time see that some participants come early to mingle with their fellow sea buddies.
Photobooth Services
This time, I am engaged to run a photobooth so that the participants can bring home a photo print out with their buddies.

Space was a little cramp, so all I had was just a bar table to balance my equipment (photo printer and a laptop).

And definitely for a photobooth, how can it be without props. And to make sure I have sufficient props for the event, I specially made some on my own so that there will be unique Deepavali props for the participants to use. After a test print to ensure everything is alright, we are good to go!

I was all set and started to receive the guest one by one whom took various shots with their buddies, all laughing, enjoying each other's company and making fun of one another after receiving their copy of the photos.
Blessed to be a Blessing
Sometimes, I really feel that whenever we do something well and the client can tell about your dedication to do your work well, they will definitely reward you beyond the fees they pay for your service. And one practical way was to keep your tummy filled even during the event.
Because it was Deepavali, the dishes were majority inclined towards Indian cuisine with just a small handful that are generic to all races. With the heavily spiced aroma in the event area, how can I not get hungry?
To share how near I was to the food - my photobooth setup was right next to the buffet line setup in the cover photo. It is not easily controlling your hunger when the food was right next to me. But thankfully, the organizers were really kind and told me and my assistant to help ourselves to the food whenever there is no one taking photos at the booth.
Then something caught my eye at the far corner:

Look at that lamb thigh being bbq-ed over the wire mesh, with a generous amount of spices to remove the gamey smell from the lamb. And I can see that the guy doing the barbecue is an expert because I can tell that the juices will be nicely locked in and for sure it will be tender to the bite.

My assistant and I took turn to man the booth. First instruction to my assistant who went off for his turn to get food, "Get me that lamb thigh!" I was worried that there is limited stock, hence I would first want to taste it and verify if it tasted as how I perceive it to be as it was being barbecued. When my assistant came back with a serving bowl of lamb thigh with potato salad, I took a bite, it was heavenly. Really so tender with a good mix of meat and fat, with juices oozing out as you savour it. The gamey taste was totally gotten rid off by the herbs that were used when barbecuing it. A super well done dish that is done on a simple wire mesh grill and not some professional grill. If I going to have a house party during Christmas, I will get this caterer to come over to my place and do the same.
Next dish that tasted really nice and not easy to find good quality ones is the following dish:

It can be commonly found is various Indian food stalls but to be fried to this standard of crispiness and flavoured well because of the herbs being used while frying, it will be a daunting task. This is so nice to bite on and the experience is even better because the caterer actually only use chicken chunks that had already deboned, so no need to worry if you gonna devour a piece of chicken 65, no bones and all meat. Meat is crispy on the outside and juicy on the inside as compared to those we find in normal stalls where the chicken is over fried and dried up.
While I only featured the BBQ Lamb Thigh and Chicken 65 in the post, there are other food such as Chicken Briyani and Rojak which were also served as well. Very tasty and authentic! So glad to see such good standard from caterers, serving at the same level as high class restaurants.

I am really thankful that many times when I go out for events, my clients will take good care of me and my crew. Ensuring that we do not operate on an empty stomach and to ensure we are all well fed.
