How I managed to prepare a hungry man jollof rice was something amazing. Although we have different ways of preparing Jollof Rice, it ranges from country to country. Most countries have their methods of preparing it, which depend on taste and the ingredients used. The one I used may not go along with the one used in other countries or other individuals. But to me, it is what I so much cherished as my husband was seriously hungry when he came home yesterday. I had thought it was not going to be delicious but after the meal, my husband gave me a 100% credit with a lot of gifts he gave to me.
In each case; I was busy taking pictures of each step except for some steps I forgot to take. It was just as if I had known that my husband was going to give me good comments. Truly, I made it by getting gifts from him. Don't bother asking me about the gifts because it is not necessary to tell you, ok?
Let's get down to the game.
Ingredients used are as follows:
Vegetable oil (the measurements were a small size tomato tin cup)
*Pepper" (according to taste)
Magi (according to taste, but I used two cubes)
Crayfish (blended)
Tomato paste (1 sachet)
"Salt* (according to taste)
Onion
Curry masala
Dried fish
Rice (4 cups)
Procedure
Parboil the rice for some minutes and then drop. Pour it into a filter so that the water drains out. You can choose to prepare the rice just like that without parboiling it. This would be done by just washing it several times.
Slice the Onion on a plate, then place the pot that is water-free on heat. Heat it until it is dried. Pour in the vegetable oil and let it steam for some minutes. Pour in the onion and stir. Pour in the tomato paste inside the pot and let it dry for a few minutes.
Pour in a little water inside the pot and let it steam for a few minutes. Then pour the blended crayfish.
Also, pour the magi, the pepper, salt, and the curry masala. Allowed to steam for some minutes, and add a little water to it. Allowed to boil again for a few minutes.
After some minutes, pour in the dried fish so that it will have its aroma inside the rice as the taste will be mind-blowing. Allow to steam for a few minutes.
Then stir thoroughly. Add some water that you would feel can cook the quantity of rice you measured. Then stir thoroughly. The reason for stirring is to allow the ingredients inside it to be evenly distributed around the rice.
Then, pour the parboiled rice into it. Then steam until it is dried. I always stir when I notice it is about to get dried up because I love the watery aspect of it.
Warning
Do not stir while the rice is on heat and still has enough water in it.
Reason
The rice would burn without getting cooked.
