I always crave for homecooked Indian food, but lately I was mostly relied on bread and butter and home made sandwich for my school lunch. Today, we have a special olympiad sesion in school. At morning it get difficult to choose or make other option. There are many breakfast option from indian recipe to choose from, from Alu Parathas to chilla to halwa. But after a while I fed up with the regular bread item and finally opted to make a quick meal for the lunch box. It came out to be a hit and surely be liked by my classmate too, I prepaired my own instant pink rice.
Although the colors does not comes out as expected but the taste was awesome. It going to be pretty late today and also the I have enough time to reach school. So preparing this recipe won't take much of my morning time. To prepare this pink rice, I made use of :
- 1/2 Capscicum
- 1/4 qty of beetroot.
- 1 Chopped onion
- 1 cup of rice
- Indian spices & salts as per taste.
In case you like to add potatoes, you can add too. But that depends on your choice. I Chopped all the veggies into small pieces. And let the rice soaked in water. It allows the rice cook fast.
I began the cooking, by frying all the veggies into a pressure cooker. This allows us to cook the rice too. I added, coriander powder, turmeric, salt, Cummins chilies and garam masal in frying out the veggies.
Once the veggies were fried, I added the water soaked rice to it. And keep mixing it properly. This allow the rice to fry as well. The colour of the mix starts turning pink. Thanks to the beet root.
I closed the cooker lid and let it to cook for 15 min. In 3 whistle my pink rice is ready to be served. I hope it going to be a tastier as expected. My Dad liked that , but it was too early to eat a rice. So I kept little quantity for him and taking all with me.
This is one of the quickest and healthiest meal to prepare. Capscicum is good for calcium while beetroot is full of other nutrient. I tried this first time, and now get a good option to carry on other day.
