I have recently started my university studies and, in addition, I enrolled in a nutrition and dietetics course. I am focused on eating healthier and taking care of my body in a holistic way.
Although we usually eat a balanced diet at home, lately I have been having a hard time maintaining a proper diet due to my time away from home for college. At times, I am forced to eat on the street and this has caused imbalances in my diet.
In the evaluation dynamics of the nutrition course, Professor Marian Lopez, who is a medical nutritionist, gave us the task of recreating a dish based on the types of diets we have reviewed in the course classes so far. I decided to make a salad following the principles of the Mediterranean diet, as I loved the typical ingredients of this diet, focused on the consumption of vegetables and the use of traditional flavors and culinary techniques of the region. In addition, these foods are highly nutritious and, in my opinion, delicious.
Next, I will attach a small infographic that I have elaborated to provide you with more information about the Mediterranean diet, and then proceed to the preparation of this tasty Mediterranean salad that I hope you will enjoy.

To begin, without further ado, here are the ingredients needed to make this recipe. It's a simple recipe that I'm sure you'll love as much as I do, and you'll want to make it at home. Let's get started!


PREPARACIÓN / PREPARATION
1st: Wash the pods and the red beans. Then, we will put in a pot with enough water to soften the beans.
2nd: We poach the pods and chop them as well as the red onion and cilantro. Uncover the can of corn and use 100gr, the rest you can reserve in a glass jar and keep it in the refrigerator to prevent damage.


3rd: Once we have everything prepared (the cooked beans and pods), we proceed to assemble our salad. In a bowl, we add the ingredients one by one and integrate them. Then, we season with a small spoonful of olive oil, the lemon juice, salt and pepper to taste. Finally, stir well and it is ready to serve.





To finish with my dish, I accompanied this delicious salad with exquisite beef liver, made with red bell pepper and green bell pepper chopped into large squares. It is important to remember that in the Mediterranean diet the consumption of red meat is moderate, so you can change the meat for grilled chicken or a fish of your choice.


When it comes to healthy eating or dieting, many people think that they must follow a strict regimen and forgo enjoying delicious foods. However, this is not necessarily true. A diet simply refers to the eating habits a person follows on a daily basis. It can be healthy and balanced, providing the body with the nutrients it needs to stay healthy, or it can be unhealthy and cause nutritional deficiencies and health problems. It can also be designed with a specific goal in mind, such as losing weight, gaining muscle mass or managing a medical condition.
It is important to include foods in our daily diet that provide the nutrients necessary to meet our body's metabolic demands. Before starting a specific diet, it is advisable to consult a nutritionist so that he or she can create a personalized plan based on your needs and goals. In this way, you will be able to obtain the desired results.
Remember that food plays an important role in our health, so it is essential to include a variety of foods that contain the necessary nutrients to keep us healthy, such as proteins, healthy fats, carbohydrates, vitamins and minerals.
