It is a delicious spinach omelet that will give that different touch to your mornings or those nights where you want to prepare something tasty, quick and simple, but that is beneficial for our body.
My mother has taught me since I was a child to eat everything and at home we maintain a balanced diet. I thank her for always including in our diet, foods that are noble and beneficial to our body as is the case of spinach.
Spinach is a plant with dark green leaves that belongs to the Amaranthaceae family. It stands out for its characteristic flavor, which I particularly enjoy, although I recognize that some people do not like it as much. Its versatility makes it an excellent ingredient, as it can be combined with a variety of foods and consumed both raw and cooked. It is also rich in essential nutrients, including vitamins K, A, C, folic acid, iron and calcium.
According to different specialists in the area of nutrition and dietetics, spinach is mainly rich in iron, but also contains antioxidants such as flavonoids and carotenoids that are characterized by giving plants colors such as yellow, red and orange, being spinach a source of vitamin A. In addition, it has anti-inflammatory properties and can help protect cells from oxidative damage. Also, they are attributed with benefits in cardiovascular health, the immune system and reducing the risk of some chronic diseases. The high iron content makes it an ideal choice for people with iron deficiency, vegetarians and pregnant women.
RECETA/ RECIPE
Now, to prepare this recipe we will need the following ingredients:
- 100gr de espinaca / 100gr of spinach
- 2 huevos / 2 eggs
- 1/2 cebolla pequeña / 1/2 small onion
- 3 dientes de ajo / 3 cloves of garlic
- Sal y pimienta al gusto / Salt and pepper to taste
First we will take the spinach leaves to wash them very well in the dishwasher. Subsequently, we proceed to poach them and then we will put them to drain in a colander. Chop them well and set aside.s




Chop a small onion into small squares and also peel some garlic and then crush it. Heat the frying pan and add a little bit of oil, add the onion and let it fry. Then add the garlic so that it releases its flavor and add salt and pepper. Stir to add the spinach leaves.






Then, beat two eggs with a touch of salt and pepper and add them to this preparation, let it cook for 5 minutes and when it is loose, turn it over to cook on the other side. Cover and let it cook. Turn off the stove and our delicious tortilla is ready to serve with whatever you like.



In my case I served it for breakfast with some slices of cassava and buttermilk. This omelet is really delicious. It is a very nutritious recipe that does not take a lot of time to prepare, so it will be easy to make at home.
