Dough with broccoli and smoked cutlet for the most delicious and nutritious arepitas [Eng-Esp]

I am trying to take care of my mother's diet, including more greens and proteins to her diet, however, the task is not only mine and I know that when I neglect, because I can not always be with her, other little people out there offer her the easiest food to make or what they are eating.

Such is the case of arepas, very tasty, but they are a lot of refined and precooked flour, which is not very good for my mom right now.

So I thought that if she is still going to eat arepas, then she should eat some with a good addition of vegetables and protein.

Ando tratando de cuidar un poco la alimentación de mi madre, incluyendo más verdes y proteínas a su dieta, sin embargo, la tarea no es solo mía y sé que cuando me descuido, porque no puedo estar siempre con ella, otras personitas por allí le ofrecen la comida más fácil de hacer o la que ellos estén comiendo.

Tal es el caso de las arepas, muy sabrosas, pero se trata de mucha harina refinada y precocida, lo cual no es muy bueno en estos momentos para mi mamá.

Así que pensé que si igual ella va a comer arepas, entonces se comiera unas con una buena adición de vegetales y proteínas.

That's how I came up with the idea of preparing arepitas with broccoli and smoked cutlet added to the dough, they are so delicious that they practically don't need any filling.

Así se me ocurrió la idea de prepararle unas arepitas con brócoli y chuleta ahumada añadida a la masa, quedan tan deliciosas que prácticamente no necesitan relleno.



Ingredients // Ingredientes:

  • Half of a previously cooked smoked cutlet.
  • 1 cup of broccoli florets cooked al dente.
  • 1/4 onion.
  • 3/4 cup of water.
  • 4 tablespoons of corn flour.
  • Salt to taste.
  • 1 drizzle of oil for frying.
  • La mitad de una chuleta ahumada previamente cocida.
  • 1 taza de flores de brócoli cocidas al dente.
  • 1/4 de cebolla.
  • 3/4 taza de agua.
  • 4 cucharadas de harina de maíz.
  • Sal al gusto.
  • 1 chorrito de aceite para sofreír.

Preparation // Preparación:

I cut the broccoli florets, cutlet and onion into very tiny pieces.

Corté las flores de brócoli, la chuleta y la cebolla en trocitos muy diminutos.

I sautéed the onion in a drizzle of oil until it began to give off its aroma.

I added the water in a bowl with a pinch of salt, not too much because the chop is already salty, and the cooked broccoli also had a touch of salt.

I added the sautéed onion, the broccoli and chop pieces to the bowl, stirred everything with the help of a fork and added the 4 tablespoons of corn flour.

Sofreí la cebolla en un chorrito de aceite hasta que comenzó a desprender su aroma.

Agregué el agua en un bol junto a una pizca de sal, no mucha porque ya la chuleta es salada, y además el brócoli cocido también tenía un toque de sal.

Añadí la cebolla sofrita, los trocitos de brócoli y de chuleta al bol, removí todo con la ayuda de un tenedor y agregué las 4 cucharadas de harina de maíz.

After integrating the ingredients with the fork, I finished kneading with my hands. I shaped my arepitas, a portion of flour, made a ball and then flattened it.

I cooked on both sides on a previously greased and hot griddle.

Luego de integrar los ingredientes con el tenedor, terminé de amasar con las manos. Y di forma a mis arepitas, una porción de harina, se hace una pelota y luego se aplana.

Cociné por ambos lados en una plancha previamente engrasada y caliente.

I had enough for 4 mini arepas, but I only prepared 2 at a time.

And although it seems that these arepitas don't need filling, I didn't want to leave them like that, my mother needs good food, plus she doesn't get satiated so easily 🤫😊

Me alcanzó para 4 mini arepas, pero sólo preparé 2 a la vez.

Y aunque parece que estas arepitas no necesitan relleno, no quise dejarlas así, mi madre necesita buen alimento, además no se sacia tan fácil 🤫😊

I filled them with a spinach and egg omelet that I had previously prepared.

This way the arepitas were much more nutritious, while still being very delicious.

Las rellené con una tortilla de espinacas y huevos que había preparado previamente.

De esta forma las arepitas quedaron mucho más nutritivas, sin dejar de ser muy deliciosas.
