One-pot meal Haidilao Fish Udon Soup // my budget cooking

Most of the time, when I cook at home, I try to cook having a low-budget in mind. I want to try to save as much money as possible in this trying times when the economy worldwide isn't doing well. I am also trying to be abased and abound. I know my husband will still bring us for dining out, so in order to balance the expenditure, we eat simple one-pot meal at home.

Fish Soup Udon

Thank God my children and my husband are not picky-eater. They eat whatever I cooked, as simple as it could be, they eat with gladness in heart. 🩷 This one was easy to make using Haidilao soup packet which I usually buy at online platform with good deals. We had tried few soup paste options from Haidilao and still thought the shrimp flavour one is the best.

Ingredients:

  • Haidilao soup packet (shrimp flavour)
  • Frozen fish slices
  • one packet fish ball
  • Udon noodles
  • carrots and potatoes

Steps:

Prepare all the above ingredients; rinse the fish slices, fish balls until clean and no more slippery feeling.

Soak the Udon noodles with water for awhile and also rinsed off. I always prefer to rinse before cooking just in case, to ensure cleanliness. Diced the carrots and potatoes (forgot to take photos).

In a soup pot, heat up 1.5 litres of water and then added in the Haidilao shrimp soup. Continued to let it simmer till boiling. After that, I added in the diced carrots and potatoes to let it simmer for another 20 minutes until the carrots and potatoes were soften. The soup would looked like this, slightly brownish. I love it that the steampot Haidilao soup-paste also consisted of an amount of preserved vegetables. It boosted up the flavour, savoury and slightly sourish but not overly sourish. Just nice!

After that, I added in the fish slices and fish balls. Let it boiled for 5 minutes as the fish cooked fast.

Lastly, I added in the Udon noodles and let it cooked for 3 minutes. At the end, I seasoned the soup with a dash of salt and pepper just to oomph-ed up the soup a little.

There it was, our meal was ready!!!

Just scoop the desired amount for each person, all of us enjoyed this simple meal together. Usually, we loved to eat and watch TV together. It just felt very warmth and togetherness as family. A time to relax and a time for happy tummy, happy soul.

Easy and simple dish but this is yummy. I made my own version of this and we love to eating this recipe.
