A Cozy Meal: Shredded Chayote Soup

Say yes to cozy meal! Of course, as comfort food falls to soup! Whether it's creamy soup or just a clear soup type with light broth when it enters the throat. So, this time I will share one of my comfort foods, Shredded Chayote Soup.

In fact, I always buy chayote for vegetable supplies in my kitchen. Even if it's for a special healthy breakfast food, Chayote actually has a sweet and not bland taste.

There are many menu choices that we can make with chayote. But this time I explored different variations to serve chayote.

Usually chayote is souped or stir-fried only with diced pieces. I thought about other shapes, textures. How about shredded? I think that's something new that I have to try!

IMG_20250523_132912.jpgHonestly, I've never made shredded chayote to make soup before. I'm really excited for this.

The main reason I want to use the texture of shredded chayote is so that it is easier for me to consume, unlike chopped or diced chayote which takes time to chew them.

Because it is titled cozy, so I think it is the right thing to make shredded chayote as a soup dish. Then as an addition that makes it taste good, I use coconut milk, but thin coconut milk. I also add ready to drink coconut milk after the dish is cooked so that it does not create a lot of fat from the coconut milk.




THE INGREDIENTS

  • 200 grams of chayote
  • 100 grams of white tofu
  • 200 ml of thin coconut milk
  • 800 ml of water
  • 5 cloves of shallots
  • 4 cloves of garlic
  • (optional) chilies
  • 1 tsp of salt
  • 1/2 tsp of sugar
  • 1/2 tsp of ground pepper
  • 1/2 tsp of ground turmeric (optional)



COOKING STEPS

First, I prepare the tofu. I just use a fork to mash the white tofu. I do this so that the texture of the tofu doesn't become mushy, and it's good to keep the texture of the tofu like coarse mince. In fact, it becomes similar to cooked minced chicken which is white in color.


Then, I continued to prepare the shredded chayote. Indeed, at this stage it took a little time but just think of it as building arm muscles, ehehe.

IMG_20250523_125136.jpgI just bought a new grater. So, I congratulate the chayote which successfully became the first ingredient that I shredded with this tool. But it is very sharp! So, I have to focus and be careful.

IMG_20250523_130638.jpgI used the largest grater holes on this tool. So, the resulting shredded chayote still has a good texture and is not crushed.




IMG_20250523_130552.jpgThen, I made fine spices using a mortar. I ground shallots, garlic, and chilies together. You can also use a blender or a food processor.


IMG_20250523_131222.jpgI also boiled 800 ml of water, then after the water boiled I added the fine spices that I made earlier. I waited for about 1 minute.

IMG_20250523_131345.jpgI also added mashed tofu and shredded chayote to it after a minute had passed. Cook for only about 3 minutes because the texture of the chayote is already soft.


IMG_20250523_131551.jpgJust before the fire is turned off, I add all the seasonings: salt, sugar, ground turmeric, and ground pepper. Then, I stir them evenly and I correct the taste, and then I turn off the fire.

IMG_20250523_131946.jpgAfter the fire is off, I add ready-to-drink liquid coconut milk and stir them evenly. And this shredded chayote soup is ready to be served.



THE RESULTS

I serve shredded chayote soup with rice for dinner. Oh, really, it is very comfortable in my throat and stomach. Moreover, when I serve this food it is raining.

The soup came out well, no one would think it was your first time

The chili! Of course, there's chili! XD Hey, this one looks so good and comforting. The coconut milk and chili would have really given that distinct flavor.

Your soup looks delicious, and I am happy to see that you use chayote, too, because I also love to add it to some dishes, for example when making Pansit Bihon.

I also like chayote... But normally I prefer it stir fried.
I the past it's rare for me to find it on Germany, so I always had to substitute it with turnip cabbage.
It's not the same but the texture and the taste is quite similar.
But I still miss chayote anyway 😜, cos it's so delicious just like what you described there 😜.
Now I can easily find chayote again here in the Philippine...
But then suddenly I miss the turnip LOL. Especially since one can even eat it raw as salad.

It seems that's just how human beings are...
They're always yearning what they can't have or at least those that's rather hard to get,
and forget to cherish what they already had 😁.
