Have you ever felt like me? Feeling too full for dinner. But this is not about reducing food or not having anything to cook. This is about cooking a simple meal for dinner.
Then I thought about the stock of solid peanut sauce that I have. In the area where I live here, people are used to storing solid peanut sauce that only needs to be diluted with hot water if they want to be consumed with other vegetables.
So this solid peanut sauce is considered very helpful in the practicality of preparing food.
What about salad? In my opinion, salad with peanut sauce is a brilliant idea! And I can mix various vegetables that I have in the refrigerator, I only need to choose a few types of vegetables that I want to eat for dinner this time.
This time, I added Chinese cabbage, carrots, and tomatoes. You can add broccoli or peas!
Anyway, about soy bean sprouts, I was very happy to find soy bean sprouts at the morning market. There is none available because usually the more common one is mung bean sprouts.
Meanwhile, soy bean sprouts are indeed longer in size with larger seeds than mung beans. And of course the taste is stronger! But I like the sensation of the texture of chewing soy bean sprouts. Even though it has been cooked, the beans will still be crunchy. I like it!
Ingredients that I use in this recipe:
- 100 grams of soy bean sprouts
- 100 grams of Chinese cabbage
- 100 grams of carrots
- 1 tomato
- 2 tablespoons of peanut sauce paste
- 50 ml of hot water
- 1/2 teaspoon of salt
How I prepare this simple meal
I clean the soy bean sprouts. I throw away a little of the root tip. Then I also clean some of the soy bean skin that is still attached to the beans. Then I wash these soy bean sprouts clean.
I also cut all the vegetables. For carrots, I cut them lengthwise. But of course you can cut the carrots into cubes.
I prepared peanut sauce. I diluted the peanut paste with 50 ml of hot water. Later, if I feel it is not enough for all the vegetables, I can dilute the peanut paste again.
In a cooking pot, I cooked all the vegetables together. I only need to add a little water so that the vegetables cook quickly and do not burn. I cooked them for about five minutes.
Then after the vegetables are cooked, I added peanut sauce and salt. And the fire can be turned off.
Serving
I added more peanut sauce, when serving. With a little sauce, it also feels fresh.
This is a salad that I like because the texture is crunchy and fresh! I did not make a mistake in choosing this dish. I love it! You can add lettuce too.
A meal that is not heavy on the stomach but quite filling. Do you want to try it?
