Warm and comfort food using ginger broth. Suitable for any season needed.
I always rely on ginger to warm my body. Ginger tea or in other things with cooking. For me, it has been proven that ginger helps strengthen the immune system and I don't get sick easily or catch flu and cough easily.
For food, we can try to make ginger broth like the one I made this time. Ginger broth can actually be cooked for a combination of many things.
The main ingredient this time is tofu because tofu is a local ingredient in my area which is a source of protein. I will make steamed tofu this time, with ginger broth.
I use a large steamer pan so I can cook all the ingredients. So it will be easier and save time for me.
For complementary vegetables, I added carrots, Chinese cabbage, and tomatoes. You can add broccoli or mushrooms. Well, don't forget to add spring onions and celery for extra fragrance!
THE INGREDIENTS
- 150 grams of tofu
- 100 grams of chinese cabbage
- 100 grams of carrot
- 1 tomato
- 1 celery stick with leaves
- 1 spring onion
- 50 grams of ginger
- 5 cloves of garlic
- 1/2 teaspoon of salt
- 1/2 teaspoon of sugar
- 1/2 teaspoon of ground pepper
- 1 tablespoons of ground coriander
- 500 ml of water
COOKING INSTRUCTIONS
STEP 1
I prepare the tofu first. Here I will first soak the tofu with ground coriander. Cut the tofu thinly but not too thin.
Then, marinate it with 1 tablespoon of ground coriander. Add enough water, at least 200 ml of water to soak the tofu. I do this so that the strange smell of the tofu can be reduced. Some local tofu has a strange smell and that's normal.
So I use coriander to neutralize the smell of the tofu. Ground coriander will create a pleasant smell on the tofu. I soak the tofu for at least 15 minutes while I prepare the other vegetables.
STEP 2
Prepare the ginger. Remove the skin, then crush the ginger. I also prepare the garlic by finely chopping the garlic.
STEP 3
Then I move on to cutting the vegetables. For the carrots, I form flowers on the carrot slices manually and I enjoy doing this, it just takes a little effort 😊.
STEP 4
Heat a little oil. Add flattened ginger, then add chopped garlic. Stir for a while.
Then add 500 ml of water. Add salt and sugar. Bring them until simmer, remove them from the heat.
STEP 5
Prepare a container to steam the tofu. Here I use an enamel bowl. Arrange the vegetables first.
After arranging the vegetables in the bowl, also arrange the slices of tofu on the top of the bowl. Do it carefully so that the tofu does not break.
Also add chopped celery and chopped spring onion.
After finishing arranging all the vegetable ingredients, then I pour the ginger broth that was made earlier.
Meanwhile, in the steamer, boil the water first. Then, move the bowl containing the tofu and vegetables into the steamer that is ready to use.
Steam for 15 minutes. During these 15 minutes of course I did something else. I cleaned my kitchen. So when my food was cooked, my kitchen was already clean again. No time was wasted.
THE RESULTS
Look at the tofu after it was steamed! The tofu will look fluffy! I have to be careful to lift the tofu onto a serving plate so that the tofu doesn't get crushed because the tofu is very soft.
