I never thought I'd like a cake that contained chickpeas (ENG-ESP)

If someone had told me a couple of years ago that a chickpea cake would be delicious, I would have doubted it. For me, chickpeas were only for stews and savory dishes, but I love trying new things in the kitchen. This is my second sweet recipe using chickpeas as a base, and it definitely hasn't disappointed me at all.

Today we'll bake a delicious chickpea cake. We'll be using chickpeas as the main ingredient, so we'll be eating something sweet but rich in plant-based protein, which excites me. A great partner for this recipe is chocolate, because it combines very well with all the ingredients we'll be using. By the way, I'm sure they're all ingredients we usually have on hand.

  • Si me hubieran dicho un par de años atrás que un bizcocho que se hiciera con garbanzos quedaría rico, yo lo hubiera dudado, porque para mí, los garbanzos eran solo para comerlos en guisos y recetas saladas, pero me gusta probar cosas nuevas en la cocina, este es mi segunda receta dulce en donde utilizo garbanzo como base y definitivamente no me ha decepcionado para nada.

  • Hoy hornearemos un rico bizcocho de garbanzo, lo usaremos como ingrediente principal, así que nos comeremos algo dulce pero rico en proteínas vegetal, eso me emociona, además un gran aliado para esta receta es el chocolate porque sí que combina muy bien con todos los ingredientes que usaremos, por cierto, seguro son ingredientes que normalmente tenemos a nuestro alcance.

  • ¡Sin más preámbulos hagamos esta receta juntos! 😉

Ingredients:

I used a 250 ml cup for measuring.
-1 cup cooked chickpeas, no added salt or sugar.
-1/2 cup almond milk.
-1/2 cup all-purpose flour (you can substitute whole wheat flour or oat flour).
-80 grams granulated panela (unrefined cane sugar), use any sweetener you have on hand and adjust to your liking.
-1/4 teaspoon salt.
-1 teaspoon vanilla extract.
-30 to 40 grams chopped chocolate or chocolate chips.
-For decoration: chocolate-covered peanuts (optional).
-Mold: 15cms. X 15 cms.

  • Ingredientes:

  • para medir he usado una taza de 250 ml.

  • -1 taza de garbanzos cocidos, sin sal ni azúcar añadida.

  • -1/2 taza de leche de almendras.

  • -1/2 taza de harina de trigo todo uso, puedes reemplazar por harina de trigo integral o por harina de avena.

  • -80 gramos de panela granulada, usa el endulzante que tengas a tu alcance y la cantidad a tu gusto.

  • -1/4 cucharadita de sal.

  • -1 cucharadita de esencia de vainilla.

  • -30 a 40 gramos de chocolate triturado o chispas de chocolate.

  • -Para decorar: maní cubierto de chocolate, opcional.

  • Molde: 15 cms. X 15 cms.

Let's get started:

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

  • Vamos con la preparación:

  • Encendamos el horno a 180 grados.

Now we will put the chickpeas and almond milk in the blender.

  • Ahora en el vaso de la licuadora echaremos los garbanzos junto con la leche de almendras.

Next, we add the sweetener, salt, and vanilla essence.

  • Seguidamente agregamos el endulzante, la sal y la esencia de vainilla.

We are about to blend, making sure that the chickpeas are very well crushed.

  • Nos disponemos a licuar asegurándonos que los garbanzos queden muy bien triturados.

Now we pour the mixture into a container and add the flour, which we sift using a strainer, and mix well.

  • Ahora vertemos la mezcla en un recipiente y añadimos la harina, está la cernimos usando un colador, mezclamos bien.

We add the crushed chocolate, here I also added a few chocolate-covered peanuts, honestly the chocolate goes great with this recipe, the darker the chocolate the healthier it is.

  • Agregamos el chocolate triturado, aquí también agregué unos cuantos manís cubiertos de chocolate, sinceramente el chocolate le queda estupendo a esta receta, mientras más oscuro sea el chocolate es más saludable.

We mix gently, making sure the chocolate is well integrated into the mixture.

  • Mezclamos suavemente asegurándonos que el chocolate se integre bien en la mezcla.

Pour the mixture into a greased or floured mold; you can also use waxed paper so that the cake does not stick and is easy to unmold.

  • Vertemos la preparación en un molde previamente engrasado o enharinado, también puedes usar papel encerado para que el biscocho no se pegue y sea fácil de desmoldar.

We bake it in the oven for approximately 25 to 30 minutes, remember to insert the toothpick, you must make sure that it comes out dry, when the cake is ready we let it cool before unmolding it.

  • Llevamos al horno por aproximadamente 25 a 30 minutos, recuerda insertar el palillo, debes asegurarte de que este salga seco, cuando esté listo el bizcocho lo dejamos enfriar para desmoldarlo.

Wow, this cake turned out amazing! You can barely taste the chickpeas, it's a very soft cake, the chocolate was fantastic, I loved it 😋
