Self-picked corn cobs from a local farm. enjoying them differently for dinner is fun and good food.

Hello, friends all food lovers, and community, today I am very glad to share this recipe which I just invented I called Maizidli
Using the corn in a different way to make dinner. This is lightly fried food- just for 5 minutes.
now is harvesting time here in Norway most crops are ready. a few farm stands are offering pick-your-own vegetables. Here in Norway, the labor cost is high. So it is easy and profitable for them to offer self-picking. The customers can pick how much they want and pay reasonable prices for the freshest vegetables. We have one very popular stand just outside of town where they have such offers for summer to autumn vegetables as they become ready to harvest.
We were there last weekend and found their corn and beans were ready so we dropped in and picked some.

It was fun to pick quality fresh vegetables. we pick for our Sunday dinner. it is much better when they are so fresh.

20240831_154030.jpg
We picked this much for our dinner. My husband wanted to cook them American-style, just boiling in water and served with salt, pepper, and butter.
But I wanted to make a new creation.100% vegan Maizidli

20240831_154604.jpg
Ingredients:
1/2 cup soaked urad dal split black beans.
1 corn cob
2 cm fresh ginger
4-5 sprigs of coriander
1 green chili
1/2 tsp salt
1/2 tsp pepper
2 tbsp cornstarch.

for sautee
1 tsp oil
1 tsp mustard seeds
1 tsp cumin seeds
2 pinches of hing
1/2 tsp turmeric
chopped chives 2 tsp
4-5 cherry tomatoes.
1 tsp avocado oil.

20240831_154826.jpg
In the mixer jar put soaked urad dal, chili, coriander, ginger, 1/2 tsp salt, and 1/2 tsp cumin seeds.

20240831_154941.jpg
Grind to a coarse paste without adding water.

20240831_155044.jpg
Grate corn off the cob using a grater.

20240831_155638.jpg
Now we have spice-mixed urad dal mixture, grated corn, cornstarch, and the tender and clean husks of corn.

20240831_155703.jpg
In a bowl take urad dal paste,

20240831_155713.jpg
Add grated corn.

20240831_155942.jpg
Cornstarch and mix it well in a thick batter.

20240831_160026.jpg
Take one cleaned tender husk

20240831_160118.jpg

Put 1 tbsp batter on the husk.

20240831_160554.jpg
and fold the husk in the center

20240831_161133.jpg
Make all husks into pockets, like this.

20240831_161234.jpg
In a saucepan boil the water put a metal strainer/ or use a double boiler. arrange all folded pockets on the strainer or double boiler. and steam for around 5-6 minutes.

20240831_163521.jpg
when the husk pockets change color and become softer they are done.

20240831_163915.jpg
when cooled a little start peeling away the husk.

The steamed maizidli come out very easily.

20240831_163908.jpg
In a frying pan pour 1 tbsp avocado oil to stir-fry the green beans.

20240831_164023.jpg
After beans become tender remove them from the pan.

20240831_164801.jpg
In the leftover oil add turmeric, cumin, mustard seeds, and hing.

20240831_164824.jpg

20240831_164834.jpg
After mustard seeds start popping/ add all the steamed Maizidli

20240831_164941.jpg

20240831_165000.jpg
Sautee them for about 2-3 minutes and add chopped chives.

20240831_165205.jpg
Add chopped cherry tomatoes fry them for about one more minute and remove from the heat.

Dinner is ready. you can serve it with tomato ketchup. I use homemade date chutney.

I stopped to say the cover looks like syncronized swimming but tamales?! Uhm, yum. Stopped for a picture, got a throwback from high school the couple years I made tamales with Michael's family on Christmas Eve. It was so fun.

Thank you.

I didn't know what are tamales before you wrote it just google it and understand what you mean. normally we use turmeric leaves to make similar traditional food. I got an idea from that to make Maizidli.

What an interesting and delicious dish you've created, dear friend. Needless to say tha the satisfaction of harvesting your own food is priceless. These corn patties remind me of the sweet corn buns from my father's hometown, east of Venezuela (with a significant Indian inheritance, by the way). The flavor provided by the corn husk wrapper is delicious. Thank you for a nice post & recipe 😁

Have a great day!

Thank you for your nice comment dear friend @marlyncabrera. so you knew about similar food.
We have the opportunity to get this chance during the harvesting time otherwise the food here in Norway is extremely high price. So not only us but many people do like to take benefit of these opportunities. thanks for stopping by. :)

You've invented a delicious dish @hindavi! I was very curious to see what Maizidli was, and I love corn.
Your family must have been happy!
What a privilege and great idea to pick your own veggies straight from the farm, beneficial for the farmer and the consumer!

Hi, we make idlis using rice and Urad-dal but they are cooked in a special steamer. I just thought about that and made a batter with urad-dal and maize. another festive dessert we make in turmeric leaves as a wrap for steam I combine both Ideas to creat this one.

What a privilege and great idea to pick your own veggies straight from the farm, beneficial for the farmer and the consumer!
this way Norwegians are very lucky to Get this type of opportunity for berries, potatoes, onions, carrots all kinds of vegetables. Even the fruits, now the harvesting season has started people put a post on FB with their address "We have lots of apples, pears plums if somebody is interested just come and pick how much you want"
We also do for apples from our garden. Ask people if somebody wants them. Thank you @lizelle for stopping by and for your support. :)

This is really interesting and looks amazing
