Yesterday my husband told me it's been a while since I prepared porridge beans and plantain. He said that was what he was craving and would appreciate it if I would prepare it for him today to take to work.
I told him there was no plantain at home, so I am going to substitute it with sweet potatoes. So let's go to the kitchen.
Ingredients
- 4 cups of beans (you can use either brown or white beans)
- Fresh peppers (quantity depends on how much you want)
- 4 pieces of large tomatoes
- 2 pieces of spring onion
- 1 clove of garlic
- 1 cup of palm oil
- 3 seating cubes
- salt to taste
Preparations
First I rinse the beans and place them in a pot with about seven cups of water.
I allowed it to boil on medium heat until it became very soft.
While the beans were still on fire, I peeled my sweet potato, cut it into smaller pieces, and set it aside.
Then I blended my tomatoes, fresh pepper, some onion, and garlic and also set aside
I chopped the onion leaves too and set them aside.
After about an hour, when the beans have softened, I added my sweet potato into the pot and covered it to allow it to cook
Then I placed a different pan on the fire, poured my palm oil, and allowed it to get hot a little bit, then I added my onion and allowed it to steam for a few seconds, and I added my blended ingredient into the pan and stirred it and allowed it to cook for three minutes.
After that I added my seasoning cubes, salt, and onion leaves, stirred, and allowed it to steam for 2 minutes.
By this time my sweet potato had already cooked, then I lowered the heat and turned the sauce I made into the pot, stirred it, and allowed it for another two minutes before turning off the heat.
