Here's my entry to the BeerSaturday 347 with a bit of a delay 😀. I was very busy last weekend and didn't have time to enjoy my beer. But tonight, after a long day at work, I took the time to open Assemblage à Francky #1 brewed by Auberge Sutton Brouërie. As you know if you've read my last Wednesday Walk challenge, I took advantage of a day of skiing at Mont Sutton to stop in at this local brewery.

Voici ma participation au BeerSaturday 347 avec un peu de retard. Je fus très occupé le weekend dernier et je n'ai pas eu le temps de déguster ma bière. Mais ce soir, après une longue journée de travail, j'ai pris le temps d'ouvrir Assemblage à Francky #1 par Auberge Sutton Brouërie. Comme vous le savez si vous avez lu mon Wednesday Walk challenge, j'ai profité d'une journée de ski au Mont Sutton pour m'arrêter dans cette brasserie locale.

Here is the map of Quebec where I can show you precisely the location of the brewery. The Auberge Sutton Brouërie is located in the town of Sutton near the US border, a beautiful little town with two breweries and a ski resort nearby.

La Brouërie was launched in 2015 by 4 friends including Patrick Roy master brewer (a former Dunham brewery I often talk about...). They decided to restore an old inn by adding a microbrewery. That's why the full name is Auberge Sutton Brouërie, where you can drink, eat and sleep... perfect for a good weekend. And for the record, Brouërie is the French version of Brewery.

La Brouërie a été lancé en 2015 par 4 amis dont Patrick Roy maître brasseur (un ancien de la brasserie Dunham dont je parle souvent...). Ils ont décidé de restaurer une ancienne auberge en y ajoutant une microbrasserie. C'est pour cela que le nom complet est Auberge Sutton Brouërie, on peut y boire, manger et dormir... parfait pour passer un bon weekend. Et pour info, Brouërie est l'écriture francisée de Brewery.

The other characteristic of this brewery is that it only makes brett beers, i.e. beer made with brettanomyces yeasts, also known as wild yeasts, which are less widespread than saccharomyces yeasts. The main strength of brett is that it can break down more complex sugars, giving a less sweet, less malty result.

L'autre caractéristique de cette brasserie est qu'elle ne fait que des bières brett, c'est à dire une bière faite avec des levures brettanomyces, dites aussi levures sauvages moins répandues que les levures saccharomyces. La principale force de la brett est qu'elle peut décomposer des sucres plus complexes donnant un résultat moins sucré et moins malté.

The Assemblage à Francky #1 is a blend of barrel-aged and fresh beers, including Francky (another beer brewed by the team). In the glass, the beer has a beautiful, fairly transparent dark yellow color with a white neck. The foam disappears quickly. On the palate, with mature beers, there's a nice bitterness and a funky edge that's hard to describe. I recommend you try it if you see it, to discover something different.

L' Assemblage à Francky #1 est un assemblage de bières affinées en barrique et de bière fraiches dont la Francky (autre bière brassée par l'équipe). Dans le verre, on a une belle robe jaune foncé assez transparente avec un col blanc. La mousse disparait rapidement. En bouche, avec les bières affinées, on a une belle amertume et un côté un peu funky difficile à décrire. Je vous conseille de la gouter si vous la voyez pour découvrir autre chose.

Design

All bottle designs are done by Marie Bilodeau, an illustrator from Quebec. I like the way she works: Patrick Roy just gives her the name of the beer, and Marie Bilodeau takes her inspiration and comes back with a drawing. The result is often very beautiful. What do you think?

Tous les designs des bouteilles sont réalisés par Marie Bilodeau, une illustratrice du Québec. J'aime bien la façon de travailler, Patrick Roy lui fournit juste le nom de la bière et Marie Bilodeau s'en inspire pour revenir avec un dessin. Le résultat est souvent très beau. Qu'en pensez-vous ?

I like the bottle design and interesting that they use brettanomyces yeasts. I think you can use this for sourdough bread also. We bake sourdough bread and keep a starter going in the fridge.

Yes, it's quite rare for beers, because it's supposedly difficult to get rid of this type of yeast once it's in the vats. But according to the brewmaster, all you need is the right technique.
