I like the bottle design and interesting that they use brettanomyces yeasts. I think you can use this for sourdough bread also. We bake sourdough bread and keep a starter going in the fridge.

Yes, it's quite rare for beers, because it's supposedly difficult to get rid of this type of yeast once it's in the vats. But according to the brewmaster, all you need is the right technique.
