Good day everyone, my recipe for today is Adobong Manok. This is a popular dish here in Philippines.
Let me share my method.
Ingredients:
Mama Sitas Oyster Sauce
Soy Sauce
King James Vinegar
Ground Paminta
Ginger
Onion
Garlic
Magnolia Whole Chicken
Preparation:
First thing and foremost is thawing chicken stock from freezer. While waiting the whole iced chicken to melt from being frozen, we may now peel and chop the garlic, onions and ginger. We may also place the ground paminta and the other liquid condiments near the stove so we can easily access them later. After 20 minutes of waiting the thaw we can now finally chop the soft chicken into small pieces, ready to sauté.
Instructions:
• Heat the pan and put just a few drops of oil in it, just enough to sauté the aromatic condiments.
• After about 2 minutes of heating oil, we can now drop the ground paminta, ginger and garlic then stir them until it turns golden brown, that would be already aromatic.
• Drop the onions and stir them all together until you smell their own aroma.
• We can now sauté chicken and cover with lid for about 20 minutes long. We're letting the chicken absorb the aroma and spice of the condiments.
• After 20 minutes, add oyster sauce. If you are worried about how much oyster sauce, don't worry because the oyster we are using doesn't taste too salty like soy sauce. Oyster sauce seasoning ingredients include oyster extract, sugar, water, and salt, thickened with cornstarch. In this recipe, I only added half of the smallest pack oyster sauce.
• We may now add 2 saddle of sauce then cover with lid. Let the chicken absorb the liquid seasonings until it becomes tender. As we wait we can check if the chicken has been extracting its natural oil so we stir them as we wait.
• When we can see that chicken appears softened we may now add the remaining liquid seasonings which is the vinegar, then cover the pan until 3 minutes to let the chicken absorb the taste of vinegar.
• After that whole process, we may now turn of the stove and stir the chicken to mix the seasoning and condiments together evenly.
