I have always loved sweet potatoes, and sometimes I have enjoyed the sweetest and sometimes tasteless sweet potatoes too, but I never paid attention to the fact that perhaps the secret of their sweetness is hidden somewhere in their personality, like it is in many other fruits. For example, on the basis of the texture, colour and aroma of watermelon, some people can tell which one will be sweet and which one will be bland. And some people can tell by shaking the coconut or maybe by tapping on its skin which one will be just watery and which one will have my favourite tender flesh. 🥥

So after a long period of intensive research, dozens of experiments, and consuming kilos of different sweet potatoes, I finally discovered which sweet potato, when baked, makes your winter days cosy and comfy with its sweetness, aroma, and warmth.

Like many other fruits and vegetables, sweet potatoes are also available in a wide variety. But here I find two types of sweet potatoes in particular, the one which is found the most is the one with orangeish skin which looks completely white or light almond like from inside, the roadside chaat vendors mostly have this one which does not have even a hint of sweetness and they serve it to you after coating it in spices and lemon due to which you do not even get to know much about its taste.

The second one is this one, whose photos I have shared; these are not easily available in the local markets, and even if they are available, their price is almost one and a half times more than the one with orange skin. Its skin is purple in colour, which you may not see clearly due to the soil of the field being stuck to it, but if you look a little carefully, then you will be able to differentiate between the orange and this purple sweet potato. This purple one appears to be between dark almond to yellow colour from inside, which turns completely yellow to a little orange as it bakes and its sweetness spreads from your mouth to your heart.🍠😋

To enhance the sweetness and flavor of sweet potatoes, it's best to cook them using the slow-baking method. I've also noticed that washing them before roasting, soaking them in lukewarm water for a few minutes before baking, increases their juiciness. Whatever variety you choose, be sure to buy sweet potatoes that don't have holes or black spots, as this indicates a bad or worm-infested sweet potato.
